I like that it has items other places do not like Bún mắm and bánh khọt and although it was good, their food was a hit and miss for me but it deserves a 4 stars because I think it is better than some but needs some improvements.
The place doesn't look much on the outside and actually can easily be missed. However the inside is decorated nicely, quite modern with touches of tasteful asian decorations. What I loved were the plants they had inside, making the place look "green" and refreshing, like a modern spa, making you feel relaxed. However since it is called "Saigonese", I was expecting to see more Saigon memobilias but instead, it has a bunch of mixed asian "stuff" there. Nice but just not really the Saigon theme.
The menu has photos of all of their items (every one of them) and the presentation of the food, when they bring out your food, are on point with their photos, so there is no "bait and switch" there; what you see is what you get which is nice.
We didn't order the 2 special items I mentioned because we felt like having the following instead: chicken salad (gỏi gà)- this was 5/5 because their dressing/sauce (nước mắm) is one of the best I have had! The cabbage is finely shaved, amount of chicken is proportioned nicely between dark and white meat. I wished they had more of the rau ram in it because that's what gives gỏi gà its distinct flavors. But the nước mắm was what made this dish delicious and dish was good! They should serve that sauce with all of their entrees that comes with THIS nước mắm cuz that was the star of meal! rice rolls (bánh cuốn) - it was 5/5. The minced pork with wood ear mushrooms was seasoned nicely. The rice rolls were soft. My wife thinks they were premade and not made to order cuz they seemed a little dried on the edges (from being nuked) but the flavor was still very good. vietnamese crepe (Bánh xèo): This was a 2/5: We waited a long time for this item and almost had finished eating the other entrees when it finally arrived. It wasn't piping hot or crispy and the disappointing part was they seemed to have boiled their pork belly slices and shrimp instead of pan frying them like how it should be cooked. (I can see that the meat didn't have pan seared markings and looked and tasted just liked boiled shrimp and pork). And they were sitting in a puddle of water/oil in the crepe. I liked the flavor of the crepe itself cuz I can taste the tumeric more than usual but my wife thought it was too much (she gave it a 1/5).
Service: This was 1/5. They were quite slow and never came to check to see how things were. We had to wave down someone to ask for our bánh xèo and even after he said he'd check on it, he never came back until it was ready (which was another 10 min or so). Antoine was the only one who was quick on his feet while the other 2 servers were slow. Maybe they aren't used to being servers or busing? I am okay with people still learning the business but they should at least stop by to see if we needed anything else. If they were understaffed, then they didn't plan well, esp for the busy, holiday weekend (Labor Day weekend).

Read moreI’ve often said the ONLY food item I can’t get here that San Francisco has is Turtle Tower. I love a good pho ga, and I was excited to try it at Pho Saigonese (PS).
My husband watched with bated breath while I took my first bite: “Well…does it compare?”
Well, yes and no.
First, PS offers fresh cut noodles — meaning it’s the correct wider cut rice noodles. They’re perfect.
Second, the soup is not quite like Turtle Tower but it’s tasty in its own right, and very… herbal. I can deal with that.
But where they fail — FAIL! — is the chicken. My dogs have toys that are less rubbery than the chicken in this bowl! It’s like someone didn’t remove the meat and just continued boiling chicken meat all day long with the broth! Like, Goodyear wants a word!
UGH. I took it all about and packed it up for my dogs. But the broth and noodles — WONDERFUL. (I only tried the broth for the House Pho and it was good.)
For that, I’d give it four stars but where they earn it back is the huge array of delicious and uncommon Vietnamese dishes on their menu, AND THE BEST NEM NUONG CUON IN LAS VEGAS.
It was very busy on a Sunday night even at 5:30 when we got there. By 6:30 when we left, it was full. Service was odd — the guy kept on taking our request and then not fulfilling them. The female server was much more helpful and on it.
And when we were leaving, not a single person said goodbye or thanks. They’re new, so perhaps it’s a fluke, but things like this matter.
For now, I’ll give it 5-stars. I’ll definitely be going back to try the other menu items, but to the chef in the kitchen — you can’t boil the chicken with the broth for days on...

Selected specifically for Banh Khot, crispy cups with a custard layer supporting Shrimp, fans will find these better than many heralded Orange County icons while oversized Banh Xeo and Cha Gio are no less impressive and arguably each the best in Sin City.
