We had a party of 5 at 1:00pm. 4 of us ordered from the buffet and I ordered off the menu. I chose a lunch of quesadillas. On the menu was offered a combination of 1 mushroom quesadilla and 1 zucchini quesadilla. On the menu separately from the combination plate was also listed spinach quesadillas in addition to various others. I told the waitress I would like to have a spinach quesadilla instead of the zucchini. I don’t like zucchini. She acted like she didn’t understand English though I saw that she communicated with other customers and had no problem. We went around and around because she would only give me a spinach quesadilla as an add on to the original combination and acted like she didn’t understand me. Just kept saying. “I’m sorry “. I finally gave up and felt I had to let it go. My friends all ordered to have the buffet. After the waitress wrote down our orders on her pad she went to get the drinks. My friends went on to the buffet. The waitress brought my plate of food. I ended up eating just a few bites of the zucchini quesadilla. The glass of iced tea she brought me was warm. After that we never saw her again. None if us got drinks refilled. The buffet ran out of food before my friends could go back for more. It was stifling hot in the side room where we were. My friends and I have eaten at Colimas a number of times over the years. It was always good and the service was as well. I don’t know what has happened there but we all agreed we would never go back. I wonder if it has new owners. That waitress appeared at the register when we paid. She seemed to do just fine with that part of her job. Read moreThe food is much better than the typical AmMex restaurant with more complex flavors, better corn tortillas, and really yummy fresh salsas. The place is clean including the bathrooms, although the decor is a little boring.
The reason for the 1 star off is that I think this place would have ridiculous wait times if really busy. It was slow with only a few tables filled and we had to wait close to 15 minutes to place our order. During checkout, and although everyone was nice, only 1 person was working the register and getting to go orders. So checkout was about 10 minutes of standing at the register dodging severs bringing food to tables next to the register.
We will definitely be going back to this place I am sure because the food is just delicious, but I think the management needs to deal with work flow and shared responsibilities to reduce waiting times.

I had the dinner special, comes with 1 crunchy beef taco, 1 smothered burrito in red salsa, one bean and cheese tostada, and one enchilada. Served with rice, beans.
The crunchy beef taco wasn't too good.Taco meat is a bit bland, and cold upon arrival. Has potential of being better.
The smothered burrito had the same meat inside as the taco, but the meat was actually warm. The salsa on the burrito was more of a tomatoe sauce than anything else. Only ingredients I could identify was tomatoe, some onion, and a hint of oregano and maybe some bay leaf.
The tostada was alright, the beans were a bit bland, but had some serious potential, (it's pretty hard to mess up refried beans).
The enchilada was my favorite part of the entire dish. The salsa had flavors of some roasted chile peppers tomatoe and onion. It was seasoned just right and was a perfect amount of spicy. If only the rest of the platter was done...
