This was someone of the worst pasta I've ever had. It could just be that the #6 sauce wasn't for me. However I chose this one because 12/17/2023 they were out of multiple sauces. I originally wanted the sauce with mushroom but they were out. I then asked for the cabanara and they were out. The told me they were out of another sauce that I wasn't interested in but that 3/10 of their listed sauces that they were out of. So I paid an extra $1 to get a sauce I wasn't sure about because I'm visiting Tampa and wanted to experience Armature Works.
Someone else mentioned that they threw their food away and this business replied that their portions are so big that people regularly ask for a container to take it home with because they provide so much food that they can't finish it. I think people are just taking home and throwing it away. That the food isn't good enough to finish.
The container is the size of your standard Chinese fries rice container. It's not a lot of pasta for $20. I usually complain that Italian restaurants give you too much food. Not here. It might be for the best. I'm trying to force it down but this is the worst smushiest pasta I've ever had.
I have been visiting Tampa for six days so far. This pasta is literally the worst thing I've experienced in Tampa outside of its public transportation. I didn't get this fat by throwing away food. But I'm not sure I can finish this.
Maybe green olives would have made it better, but they were out...

When they finally opened in Tampa I was so excited to try it. Unfortunately I was greatly disappointed and like many other people I only ate a few bites. My biggest hang up was the unpleasant texture of the pasta. It was very gummy, overcooked and not al dente at all. Al dente is the preferred texture among Italian chefs so that is what I expected from a place that puts heavy emphasis on authenticity. Fresh pasta needs to have exact ingredient measurement and only needs to be dropped in boiling water for 1 or 2 minutes. Even a couple minutes over that will impact the texture.
Once I bit into the mushy pasta I hoped that the sauce would redeem it but it was incredibly bland. I tried to make cacio e pepe at home once and it had the flavor but I couldnāt quite get the texture right. This place had the texture but no flavor at all. So I added salt, pepper, red pepper flakes and Italian seasoning which didnāt help at all.
I still follow them on IG because Iām hoping it was just one bad experience but the texture was so off putting that the next time I try it, itāll be out of convenience and not because...

We've since wondered how in the world it isn't in the US. Then the other day on a trip to Tampa- as we were wandering around Armature Works- our jaws about hit the floor when we DalMoros! We were SO excited, and we hope that it expands rapidly. We only ate dessert here this time- but the tiramisu was super yummy as was the lemon sorbet (especially had it been warmer outside- this would have been an amazing way to cool off). I talked to the manager on duty about expanding to my area- and had mentioned Freedom Street Social - a food place near us in Arvada. After giving it some thought though- you should consider Pearl Street in Boulder, Colorado. I'm sure the rent is much higher- but it's a pedestrian mall -so the concept of Italian to go might be better. the place near us isn't really walkable. Or 16th street mall in downtown Denver. Definitely hope to see a DalMoros...
