I've been coming to Mi Rancho for several years and they've only gotten better over time.
Tex-Mex is their specialty and they do it well. Red salsa comes served hot, along with chips when you're seated. If you like tomatillo-based salsa, salsa verde is available only upon request and is served cold. The chile con queso (large is best for 2 or more people) is mild and delicious, and is served with sliced jalapeños. Personally, this is my favorite queso of any Mexican restaurant I've visited.
Dont expect to wait too long for your food to arrive once you've ordered. I've never waited more than 5-10 minutes for my meal to come out, even during peak business hours. Most people are surprised when the waiter comes to the table to deliver the food.
No specific recommendations on food because everything I've tried is equally as good as the last dish. Chicken, beef, fish, shrimp, pork chops, quail, and bacon are all available in various dishes. A lunch menu is available daily from 11AM - 3PM with dishes starting at $8.25. Otherwise, expect to pay about $10 - $12 on average per entrée.
Kids can choose a burger or chicken nuggets if they aren't keen to Mexican food. Otherwise they have kid portions of Mexican dishes.
There is a bar at the back of the restaurant which isn't normally very busy, and serves up some great margaritas.
Plenty of TVs throughout the restaurant, which give it a more sports bar like feel while still remaining family-friendly.
Overall, this is the Mexican restaurant I frequent the most and my top recommendation to friends for good...

After sitting for fifteen minutes waiting for a waiter/waitress I went to the counterto inquire about being served. When I asked for the manager he happened to be at the checkout counter. After hearing my statement he escorted me back to my table but did not offer an apology for his staff's poor service. Mi Ranchos Spring, Tx location gets a F+ today. Update!
Today is October 22, 2023. After work I decided to eat at Mi Rancho again. Upon entering the restaurant I made it a point to speak with the cashier at the front desk. I told her that I hope to be waited on this time efficiently. However, no one came to wait on me after sitting for fifteen minutes. Therefore, I went to the front manager to speak with him. I politely explained to him that once again no one came to service the table where I was sitting. He said that he would get someone to help me. I told him that I would be contacting the owner of the establishment after today's incident. Nonetheless, a young walked over to me. She said that the cashier told me to look around for a table and let her know if someone doesn't help me. I stated to the young lady that what the cashier told her wasn't the truth. How many incidents of this sort has to occur before management addresses the issue? Again, I will be contacting and writing the following individual:

   Read moreThis is usually one of the more crowded Mexican restaurants in Spring. I came in about 2 PM on a Saturday, to about 1/4 of the restaurant full. They offer lunch menu with discounted prices until 3 PM.
I ordered a large queso and chicken fajitas. The queso was of a thicker consistency and comes in a good size bowl, but otherwise unremarkable. The chips are a little sturdier than the standard light, airy chips I get from most other restaurants. My current favorite Mexican restaurant queso is Los Cucos, since their queso comes with fresh pico de gallo topped on the queso and also comes with amazing toasted tortilla chips.
The chicken fajitas were plump and juicy, if a little bit bland. The onions served on the fajita plate were very soggy. The guacamole tasted fresh and flavorful though.
