Their coffee and coffee prep is pretty good. I tried the single origin washed Honduras made as pour over as well as espresso. It's a good bean, their in house roasting is good. Pour over was my preferred caffeine delivery method with these beans at this shop. The espresso has a nice mouth feel and good flavor. Nice acidity, but some sourness that could be refined with more regular adjusting of espresso parameters. I'm sure the milk drinks would be perfectly fine with this espresso. Appreciate the unique experience this place brings to us. Not since the espresso bars of Rome have I found this. The added element of a coffee genius in Hyg makes the experience all the more second level to any coffee shop as I feel I learn something every time I go in. Today I learned I was the first to actually finish the espresso flight, which I highly recommend. Stumbled upon this coffee shop while in the area for a conference. Really solid espresso drinks and friendly service. Multiple options for beans and mostly real coffee drinks on the menu (always a good sign). West Coast idependent coffee shops like this one are a relief. I wish east coast cities could compete on this score but unfortunately not. Anyways, I will happily return when I'm back in this neck of the woods....
