This was our first visit to Tallow and cannot stop mentioning how great it is. From the second we walked in, the staff was very welcoming and friendly. The smashburger was juicy and on a perfectly paired bun. Their brisket melt was great as well, it came on a nice toasted bread with savory brisket inside and a white sharp cheddar. The steak that comes with the steak frites was so tender and barely needed to be cut. The garlic aioli on the side was delicious and great for the steak and fries. Their fries are a nice thick cut and have great dry seasoning on them. Wherever you are, make the trip and you will be coming back. We also got a lemon tart for the road and the oatmeal crust is great with tart.

IDK who gave this place a 1 star review but they must be out of their mind. I have ordered food a dozen times and it is absolutely amazing. I liked fast food as a kid. Anyone who can eat McDonald's or Chick-fil-A, you have a strong stomach because I feel terrible after. Tallow does "fast food" but when you're done eating it, you don't feel terrible about your impulsive eating decision. Everything is amazing, the staff remembered my name after my first order, and there is no seed oils, so you feel great after a burger and fries (that do not need ketchup) because the beef tallow flavor is incredible. They added a fried chicken sandwich that I just had for the first time and it is my new favorite.

The plate was wiped clean to ensure a good presentation. No of it seemed performative. The people being the counter are clearly well trained. My only regret is that the menu didn’t seem to stretch their skills or talents. Maybe it’s the local market.

Tallow completely redefined my expectations of “fast food.” I have to admit, walking into a space that used to house a McDonald’s and a Burger King gave me serious pause—I wasn’t here for that kind of fast food. But once I stepped inside, I realized I was in for something very different.

The interior is stripped down and sleek, with a minimal aesthetic that feels fresh and intentional. Everything was spotlessly clean, and the open kitchen gave us a front-row seat to the cooking process—a reassuring touch that emphasized transparency and quality.

And then—the menu! Bone broth and French fries, together? Yes please. It’s a surprising combination that somehow works, like a collision of nourishment and indulgence. Every item we tried was bursting with flavor and clearly made from thoughtfully sourced, local ingredients. Nothing felt mass-produced—everything felt made for you.

Went in with my family of four. Two adults two kids. It was a fantastic meal, and afterwards we all talked about the cooking quality, how good we felt after eating here, and how you could taste that every ingredient was homemade and of the utmost quality.

My wife and I are both local farmers, who grow organic produce and flowers for a Michelin stared restaurant in NYC. For us, seeing and tasting all local products is really such a treat! And as farmers, being able to feed my whole family here for a reasonable price is a huge plus. I gotta say, the food here tastes like the region. It highlights the local producers and what is currently in season! The quality of ingredients leaves you feeling energized. All of this without sacrificing the flavor of indulgence. Rather, highlighting how much better local, mindfully raised/grown products taste and feel!!

Go eat here, support this place and help them grow!!! I’m excited to come back and taste new and exciting things, and to get a fantastic smash...

Tallow is a promising new addition to the Millerton dining scene that's still finding its footing. They already have my vote for the best fries in town.

Their commitment to quality ingredients shines through. The hamburger patty, bacon, and pickles taste noticeably fresh and are apparently from local farms.

The patties are what keep this from being a perfect score. Both patties we tried lacked the essential crispy edges that define the style. Instead, they fell apart as if they hadn't been properly pressed on the griddle. For comparison, local favorite Willa nails their patty technique at a similar price point, while Sundaze in Poughkeepsie remains the valley's gold standard at half the cost.

That said, Tallow is worth visiting if you're seeking a more upscale burger. Be sure to check out their specials. The watermelon gazpacho was particularly delicious.

Pro tip: substitute the cabbage for lettuce on your smashburger to improve...
