The Salt Line, newly opened across from Vassar is going to become quite popular once move-in weekend comes around. The building is a rather striking design making it slightly out of place aesthetically, but still verk sleek and not cheap looking at all. The interior of the restaurant follows suit as well, however I do believe it might be a tad TOO minimalistic. Again, not bad, but it looks like it was only decorated 85% of the way through. But this is a restaurant review, so I digress.
The menu is a bit skimpy, but the Trout, Burger, and Rigatoni were all good. The fish, although farmed, was a good size, but was a little bare in the plate. The Rigatoni was cooked perfectly, finally not another overcooked pasta in the Hudson Valley. I think the Burger and fries were a standout. Nothing too crazy, but the fries were seasoned well, crisped perfectly, and the burger sauce was great. The English muffin bun really added to the dish as well.
All this said, I do think most of the menu is really pushing it on pricing. The value of the Burger makes the rest of the menu seem a tad egregious. Again, the food was good, but I don't think the rest of the menu can demand those price points quite yet.
The drinks were somewhat of a different story. 2 different cocktails, a wine, and a zero proof beverage all led to the same, slightly overpriced conclusion. Unfortunately, the drinks weren't prepared quite as well as the food was, so it pains me to say that they need a lot of help. A bit too syrupy, not particularly well thought out ingredients, and imbalance between flavor notes. I probably won't order a cocktail again, especially at $16 each.
Finally, although our server was very good, food service was pretty slow. There were not many tables when we ordered, so we were surprised it took about an hour to get only 4 entrées. Unfortunately it seemed like a similar wait amongst the other guests dining as well.
The Salt Line is going to do fine. Owned by Vassar, operated by a hospitality group, they'll never go out of business in that area. That said, I think some menu and pricing work needs to be done to keep people...

We were seated by the windows, so we had a nice view of the tree-lined grounds. The menu has a good assortment of seasonal vegetable items, but since I’ve been eating a lot of salad lately, I wanted carbs, so we decided on the table bread appetizer. I like hummus but wasn’t necessarily a fan of the beet & harissa hummus, but the bread was wonderful and the rosemary butter was divine. I was planning to order the trout entrée based on the online menu, but the more extensive menu at the restaurant offered roasted long island duck so I chose that instead. It was perfectly cooked at mid-rare, and very well seasoned with crispy skin. The corn accompaniment was tasty but not the most exciting, but the mushrooms added a nice meatiness. The berry coulis was fine, I would have preferred something more tart to counteract the duck. It didn’t stop me from finishing it, though. My husband had the local grass fed steak which was also cooked nicely and very tasty, if just a touch short on the salt. Both entrées were enjoyable and well composed. Cocktails were well balanced, enjoyable and well made. We decided to skip dessert since I’m lactose intolerant and only one option would have been safe, so we ordered another round of drinks and another order of the focaccia. Service was polite, attentive, and friendly, though we did have to wait a little bit for cocktails from the bar. The one negative, if I’d call it that, is when I overheard the waitress mention the specials for the night to the table next to us, since we were not given a specials menu or told about them. Today, my choice for lunch was The Salt Line Rueben prepared with thinly sliced provolone. A nice twist to the typical Rueben. I opted for the tarro root chips instead of French fries. My wife ordered the Smash Burger which is worth reviewing. Yes, there are a lot of restaurants with burgers on their menu; but the difference remains with how the burger is prepared. The Salt Line Burger includes Munster cheese, jalapeno & onion marmalade, truffle ranch with Gary's pickles; a wonderful flavor infusion. Our beverage of choice was Saratoga Sparkling water.
