Could not leave Tucson without trying Tacos Apson. Who could resist after seeing them shaving the rib meat off the bone in that Mark Wiens video? The shaved rib meat tacos brought us, but in my humble opinion, the real star is the tripas (tripe....intestine?) tacos. For tacos, we had the carne asada, shaved rib, apson and tripas and a carne asada burrito and walked away paying about $41. I also love that they are not limited to cash only, given that I really rarely have cash on me. So luckily, they take cards and Apple pay. While the seating was outdoors, they do have a bathroom that you can access. Normally, when you order tripas, you're risking them being too chewy, a bit gritty or....tasting green or grassy (usually what the animal ate) and overall a bit unappealing. My mom always taught me to clean them well, then chop a bit on the smaller side and cook to a bit of crispiness. It seems they were taught the same way here! I only ever order one when we're out, due to the reasons listed! But the meat was chopped small enough and crisped well enough that it was not too chewy and I got no greeny/grassiness or grittiness at all. I know some prefer it, but I do not. That made the tripa taco my absolute favorite of the bunch, with the shaved rib meat coming in 2nd and asada a close 3rd. The taco apson sounds yummy and I thought it would be my favorite! But the taste was super bland, which I found surprising since it had bacon and green chile. They also offer salsas, onions, limes and cabbage. I found the salsas (tried both they had out) to be flavorless, so I don't recommend them but the lime and onions are essential. I did not see cilantro, but keep in mind, I think they were just temporarily out since they had a sort of salsa bar set up outside and they seemed very busy inside while the outdoor salsa bar seemed very picked over and empty. If we were to come back, I'd likely just get 3 to 4 tripa tacos, throw some onion and cilantro on top and squeeze some lime on before devouring. Their prices here are fairly inexpensive, given the current prices of meat. They really do not skimp, which is great since some taco places give you more tortilla than anything. We also got our order within a few minutes, which I consider quick. Definitely recommend trying them out if you're looking for tacos!

Despite my minor qualms about the pricing, the exceptional quality of the salads ensures that I will definitely return to Apson Tacos in the future.

Brother in law recommended we stop in for tacos. First time visiting from Phoenix. He's been here before. The location is humble and filled with character. The atmosphere is authentic and the vibe is comfortable. The food however, was not very good. I ordered the rib tacos. You could tell they were from the night before, as the meat was dark and the oil from the meat tasted a bit rancid. I followed it up with the barbacoa burrito. The barbacoa was bland and needed seasoning. Brother in law ordered two more carne asada tacos. Again you could tell it was just reheated meat from the day or night before. Kinda pricey too. First round was 25 ish with drinks. Brother in law picked up the second round. The salsa bar was ok too. Red salsa was good, green didn't look too appetizing and the shredded cabbage was dry. Pickled red onions were great. Quite a bit flies, but that's hardly something one has too much control over.

Brother in law recommended we stop in for tacos. First time visiting from Phoenix. He's been here before. The location is humble and filled with character. Authentic Taco Heaven at Los Tacos Apson on 12th Ave, Tucson

My culinary journey at Los Tacos Apson, located at 3501 S 12th Ave in Tucson, was nothing short of spectacular. I embarked on an ambitious quest to try every taco on their menu, and I was not disappointed.
