Doctor Kustom provides a taste of Brazil through a curated menu that changes daily. Its owner, Alex Figueria, was a semifinalist for Best Chef Southwest 2024 by the James Beard Foundation.
Doctor Kustom is a food stall at Mother Road Market in the Tulsa Market District along historic Route 66. Mother Road Market is a community space, where guests can shop & enjoy diverse food & retail concepts under one roof. In addition to nearly two dozen food stalls is Kitchen 66, Tulsa’s kickstart kitchen + food incubator, which features a rotation of food entrepreneurs. Mother Road Market is situated in an industrial warehouse-type building leading into a bright & colorful food hall. The food court is clean w/ ample seating space both inside the hall & in its covered patio.
Doctor Kustom Thursday’s menu features the Picanha Sandwich. Customer service was solid. The staff was welcoming & fielded questions regarding the menu. There was a 30-minute wait for food, and I appreciate the staff informing me of the wait prior to paying for my meal. Believe me, it was worth the wait.
I ordered the Picanha Sandwich w/ Fried Polenta, Passionfruit Mousse, & a Guaraná Antarctica.
I generally steer away from polenta, but I am now a fan of fried polenta. The polenta had a nice balance between the exterior crispiness & the interior creaminess. The finely grated parmesan cheese on top made it hard for me to stop eating.
The steak was prepared a perfect medium rare & was tender & juicy. Every ingredient had a purpose, from the creamy, 🧄 spread to the greens to the generous amount of Havarti 🧀 to the Ciabatta bun. I would have waited double the time to savor this meal.
I enjoyed the passion fruit mousse. It was creamy & just sweet enough with a nice tartness. I would have preferred my mouse seedless, but that is solely a personal preference.
The Guaraná Antarctica reminds me of a tart berry-flavored ginger ale.
I would happily come back on a Thursday for the Picanha Sandwich or anyday to try a pastel. Doctor Kustom also hosts a Chef's Table on Tuesday evenings - but plan to book well in advance as they are booked for 2024. If I had another few days in Tulsa, I would properly visit the other stalls, including the offerings...

Beverage ✅ Always ice-cold, with a refreshing orange on the side of the “ Original Guarana” and a perfectly chilled water bottle—just right! The family (staff) were kind and considerate of asking if we needed anything, but allowing us time to enjoy the deliciousness of the meal and eachothers company. The food was prepared perfectly and had just the right amount of seasoning to not overwhelm each piece. You could still feast and enjoy the pureness of the romaine and the smashed potatoes were simple with whole garlic cloves...the way I like it. The tenderness of the pichana was perfect and cooked med-rare to allow the flavor to speak prominently. I had never experienced Provoleta and must say the pairing with the herbs and roasted tomato was perfect.
