Had a low expectation when walked in after reading all the negative reviews on here. But actually to my surprise, food was pretty decent. Miso soup however, was super salty, even after I asked our waitress to make it less salty… I don’t think their sushi is as low quality as market grade as some reviews say. They have a small menu though..

We had a great dinner. The special appetizer of oysters were delicious. The rolls were excellent. I had tuna sashimi and enjoyed it. If you're staying on-site at the Grand Hyatt it's excellent to have a sushi option.

Had a wonderful experience at Yoshimi Pop-Up. This restaurant is located within the Grand Hyatt at Vail. The sushi was fresh, and the service was excellent. We absolutely loved the oysters and would definitely go back!

Blindly agreed to go this restaurant, and oh boy I regret it now. Unfortunately, everything we had was mediocre (poke? - Joke, cucumber & sesame seeds? - terrible, rainbow roll? - unacceptable, edamame - the only edible item). I didn't even want to talk to a manager in order to improve our dinner experience, we just quietly paid our bill and left immediately. Can't comprehend how is this restaurant can be on premises of...
