The atmosphere belies the experience the restaurant is trying to to create.
My wife and I went together and enjoyed the wines. They run mostly old-world, which is a nice contrast to California wines. We each had a delicious Albariño, then she had a French blend, and I had a Rioja. We nibbled on toasts with manchego and rosemary; smoked salmon with cream cheese; and tuna salad (all to go with the white wine). None of these are very imaginative, which is actually my preference. The tuna salad tasted like, well, tuna salad, as in Chicken of the Sea with mayo. Then we had our reds and shared the pork tenderloin and the meatballs. They both were correctly prepared and competent and good with both wines.
My biggest complaint is the atmosphere. The floor is concrete. The tables and chairs looked as if they could be in any inexpensive burger joint. The prints on the wall were cheap, scattered without thought, and ill-proportioned. The only light sources came from harsh gallery lighting overhead. It seems like there are some easy fixes. Start collecting mismatched wooden tables and chairs so that all the surfaces (concrete, plastic, metal) aren’t so inhospitable. Find local artists to sell paintings that are on your walls. Change the awful gallery lighting overhead. And for the love of all that is holy, at least put some candles on the tables or some soft rechargeable lamps.

Read moreWe decided on a girl's evening of tapas. We walked in and from the beginning to the end of of evening, the service was exceptional. Exceptional does not begin to describe the service. Friendly, professional, personable are just a few. Now on to the food. The tapas were delicious. From the cheese and meat platter to the individual bite sizes(Pintxos) to the potatoes and the desserts. When you make reservations it states your table for 90 minutes. After 90 minutes we were still ordering. It was a food fest that delighted every bite and moment. On a personal note I thought it was so sweet that the Chef came out to greet us and others and make sure we were enjoying the meal. They have a secret dessert that is not on the menu. I highly recommend that you ask and get. I highly recommend this establishment for all occasions. 5 stars...
Read moreMy husband and I long awaited the opening of Segovia Wine Bar, and it has not disappointed. It has become one of our favorite places to grab a glass of wine and some delicious Spanish-style tapas. On top of the fabulous wine and food, the staff are knowledgeable, attentive, and go above and beyond to ensure customer satisfaction. The owners in particular show a passion for their business that is contagious. They are friendly, caring, and truly value their customers. The atmosphere is clean, warm, and inviting, and a great venue for live music which they frequently have. The prices are fair for the selection of wine and quality of (very fresh) food offerings. Segovia Wine Bar is what Downtown Waco has been missing and I highly encourage stopping in and enjoying the wonderful...
