Great place to get your local brewery fix! This place has a good ambiance, it was quiet but happening, and had a Cajun inspired food menu with poboys, wings, and appetizers.

I love Stout beers and the Dark Side Mash did not disappoint. I wanted to try some of the other more popular beers as well so we ordered a flight with Hazy Burst Orange (HBO), Waco Kid, Built for Speed, and Ba Bruin. We also ordered a pretzel and corn fritter appetizers.

Dark Side Mash was delicious. Like most stouts I noticed a hint of chocolate which was nice. It was so smooth and flavorful. This was my favorite drink of the bunch. The Hazy Burst Orange tasted like most wheat beers taste but it too was also super smooth. The orange really came out in this brew. Build for Speed tasted good but was a bit too hoppy for me. Ba Bruin was a bit darker than the other three on the flight but I still enjoyed it.

The corn fritters are the reason this review is getting 4 stars instead of 5. They had no flavor. Even with the side sauce it still had no flavor. You'd get bits of corn flavor from time to time but that's it. I would suggest either using a sweeter corn, adding cheese to the dough, maybe some bits of bacon, or season the batter to make them better. If you don't want to do any of these things then make the sauce more flavorful so it'll counteract the lack of flavor from the fritters. They were cooked well and had good texture just no flavor.

The pretzel was awesome! I really enjoyed the beer mustard a lot! The mustard to pretzel ratio was spot on! I'm a huge fan of salty foods when I drink and this was just what I needed.

We will definitely come back and try the other foods on the menu. We recommend this place to anyone looking for a good...

Tl;Dr - Staff is cool and beer/food is ok.

Cool place in downtown. It's a more cozy setting here. Not a large sitting area inside, but it does have a cool patio street side to just hang out. Came here while driving through town. Had gone to a similar place a few days ago, so figured we'd try the 2 places close to each other.

Day we came, there was a TX/Baylor game on 1 TV. The other set had USA vs England. There was a good crowd there for the College game. The grille was out of order, so only microwave and fryer were working. We ordered chips and queso to get going. We ordered food (wings and Fish & Chips) shortly after with our beer. Staff was friendly and got the beer fast, while putting the food order in. Then we waited for about 35 min for the food to arrive. Chips and queso came out almost immediately, but the rest of the food took a long time when there wasn't much activity going on. The other thing was there were 2 servers working (plenty for number of people) but our food got left on the window sill waiting pickup because neither heard the bell and were serving others. I waited until they were done with other then asked if it was our food sitting. They checked it and brought it over immediately. Again, the 2 servers were cool and chill. Very friendly. Even chatted with a couple of us about the World Cup. The food was ok. Tasted like it had been fried in some old oil. More Bar food than gastropub. To be fair, i don't know they they advertised themselves 1 way or another. As i always say, regarding the beer i suggest checking out Beer Advocate or Untappd. I recently visited Waco Ale on a Friday night and was impressed by the delicious beer selection. The atmosphere was lively and the staff was friendly. However, I was disappointed to see that they were starting to close early.

Shortly after 10pm, the staff began cleaning and flipping chairs, signaling that they were preparing to close. Last call was soon after, and they closed at 11pm. I couldn't help but feel a bit rushed and pushed out 30 minutes early on a Friday night.

Despite this, the beer was fantastic. I enjoyed trying a few different brews and appreciated the variety available. I just wish I could have stayed longer to enjoy them. Overall, I would recommend Waco Ale for their great beer selection, but I hope they reconsider what time is appropriate to start cleaning and...
