The food looked amazing, but it lacked any real flavor. It tasted like a white person trying to make homemade Mexican food. When I order mexican food, I want it to taste like mexican food and not something that i could've haphazardly whipped up at home. The street corn wasn't even cooked. Street corn isn't difficult to make: Remove the husk and silk from the corn. Give them a quick rinse if you like. Fire up the grill and place them directly on top of the grates. Grill until cooked, golden brown and charred all around. Once ready, transfer onto a plate.
Assemble: Brush the cream/mayo, sprinkle the cheese and guajillo until the corn is well coated. Drizzle the hot sauce, a touch of lime juice, cilantro and salt.

Read moreThese guys were at tacos and tequila festival. What was a 30 min wait turned into a 2 hr+ wait for our food. We had to miss the performers we wanted to see and it was very unorganized. You took more orders than u were able to serve and left people very upset. I am pregnant and while in line I overheated and actually ended up getting sent to the hospital. My husband went to the window 30 mins after our order was placed and said “my wife is pregnant we need our drinks” and nothing no communication we had to wait 2 hrs for the water we paid for even with a medical emergency where I ended up passing out and going to the hospital over. I understand they were busy but you knew that going in! When our food was finally handed to us over 2 hrs later, he didn’t even give me my drinks I had to ask AGAIN!!!! Plan better, communicate that u can’t keep up with orders, and my god at the very least give people their drinks before making them wait in the scorching heat for 2 hrs. As a regular customer, I’ve watched them go above and beyond — even in total chaos like the Tacos & Tequila Festival, where every vendor was swamped. They don’t cut corners, they treat customers with respect, and their food is consistently phenomenal.
To the reviewer complaining about long lines and not getting water fast enough while pregnant at a Tequila Festival… I mean, really? That’s not on the taco truck. That’s a personal decision with consequences. Don’t throw blame at a small business working as fast as humanly possible in 90+ degree heat when you chose to wait in a food truck line instead of taking care of your own well-being.
