So much to love about Windsor’s Mi Tierra!! From great location in King Sooper’s shopping center to the friendly staff to the very good and authentic food, this should be a planned visit for dine in, take out, or ordered through a delivery service. It’s a cozy place with about 7 booths and very clean inside. My daughter got the Cowboy Burrito, which was enough for 2 meals! It is stuffed full of seasoned steak, potatoes, avocado slices and onions. It was covered in pico. This was very flavorful and just fantastic, but the potatoes inside a burrito are different. I ordered the shredded beef chimichanga. I am used to chimis stuffed with rice, beans, onions, and meat. This one was very simple in nothing more than the beef wrapped in the tortilla then fried, but risky as the beef had to be flavorful enough to stand on its own. This was spectacular choice as the meat was amazing! I ordered the “plate,” so it came with rice and beans. Both had the option of being smothered in mild, hot, or half and half verde. We both went with the mix and it was excellent! Depth of heat, but not too overpowering. They made everything to order, which was awesome too see. It’s much better to wait a 5-10 minutes over having them microwave pre-made items.

To me the type of green chile is important when I choose a restaurant so I am going to first say that it's not Colorado Green Chile. Nothing wrong with that but don't come here expecting it. The green chile that they make seems more like a New Mexico Green Chile. There isn't any flavor, it's just spicy. I'd say it'd be considered a medium hot to hot at most places. I ordered cheese enchiladas with rice to pick up. The enchiladas were "smothered" but all of the chile ended up in a puddle under the lettuce and tomatoes on the side. The rice is so bland. No salt or anything else. It actually tasted like soapy water. There is no cilantro so that's not what made it taste soapy. I won't likely be back.

Update: Visiting from Florida and couldn't wait to eat their Pozole again. Wasn't disappointed except for their sopapillas. They were over fried and hard. But I hope it was a one-off. Other than that, it is a great place for breakfast and daily specials. First time eating at Mi Tierra. Wonderful service and good food. It's was my dad's 90th birthday and we really enjoyed our meal. They gave him free soppapillas and a mini oreo cake for his birthday. We will be back for sure! Thank you for being so kind and generous on his 90th birthday!

Update: Visiting from Florida and couldn't wait to eat their Pozole again. Wasn't disappointed except for their sopapillas. They were over fried and hard. But I hope it was a one-off. Visited recently and ordered a steak breakfast burrito smothered. The burrito was pretty large, but it was also really expensive. $8 plus tax. That is outrageous when I can get 3 breakfast burritos from most restaurants for the same price. The green chili they smothered the burrito with was basically just orange liquid. There was nothing in it at all. There were not even visible pieces of chilies. And the sauce had a little heat, but really lacked flavor. The burrito itself had a lot of eggs and potatoes and minimal steak. I got half way through the burrito before I found any steak, it was all in one end. The steak was cut in really small pieces and was low quality cuts of thin steak. It had as much gristle and fat as it did meat. The burrito was also quite bland. It tasted like scrambled eggs. It was quite disappointing overall. Fast food burritos are far better than this and still less than half the price. Simply not...

Excellent Mexican food! Delicious! The Breakfast Burritos are to die for and huge!. I’m addicted to this place! The owners are very sweet people and treat their costumers great! Also, just had their taco both hard and soft....omg sooooo good, it was different but, in a good way. I just told my wife I want to try everything on the menu! Btw, I read the other reviews here and people need to know that the Mexican green chili isn’t “Colorado” green chili.....It’s very different! It’s from another country kind of different....it’s Mexican. I thought it was full of flavor! Very tasty! I lived in Michigan and Az before moving here 13 years ago and have had green chili just never had “Colorado” green chili. My friend just moved to Florida and was shocked and had no idea that you couldn’t buy “green chili” there, like the green chili...
