My parents, my small child and I were in Winter Park for the first time and stumbled into Volario’s early on a Friday. Little did we know we were arriving at what would soon become one of our favorite restaurants in all of Colorado.
From the moment we arrived, the hostess was gracious and funny, bantering with my Dad. Our servers Kirby and Mithu were incredibly friendly and engaging with my 1-year old, and immediately we felt at home.
Then we ordered — my gosh, literally each dish we ordered was spectacular. From the gnocchi with a lovely pesto, to the handmade bucatini carbonara (which, unlike most Italian restaurants in the US, was ACTUALLY served beautifully al dente), to the — wait for it — 72-hour fermented crust pizza with mushrooms and unbelievably sweet caramelized onions.
I’m not exaggerating when I say this pizza is one of my 4 or 5 favorite in the entire country, and on par with my favorite spot in the NY/NJ metro area.
After our meal, the manager David welcomed us back into the kitchen to thank the chefs and cooking staff in person.
The meal was so spectacular, we came back a week later with my wife for her 40th birthday. She was skeptical when we were talking it up, and we then were treated to an even more incredible experience with Swapnil taking exceptional care of us (including making a batch of his special calabrian chile honey aioli!). We had such an amazing time, my wife wanted to return the next night again!
I’ve lived in the Denver metro area for over a decade, and Volario’s is honestly among my top 3 restaurants in the state. We may even contemplate a quick trip up to WP just to celebrate date night. Read moreI would give this place less than one star if I could. The entire experience on 2/22 was a disaster from the start. The server had no clue when trying to explain the special or the wine list. Drinks took 30 minutes. Appetizers came out before drinks. After being there for 75 minutes the server said the pasta machine was broken and they couldn’t prepare our entrees. Pretty sure that was untrue since the table that came in after us was served their entire meal minutes before we were told the bad news. Server offered pizzas only to come back and tell us the oven was turned off, cleaned and wouldn’t be turned back on. Server brought two Cesar salads that were room temp and had probably been sitting in the kitchen for the entire hour after we ordered them. Sever also offered six orders of lasagna and literally said “it’s now or never” because the kitchen was closing. I get that, but extremely poor choice of words. Would have been nice if the manager had stopped by to chat on behalf of the establishment, but seemed to have zero interest in the situation. We had to insist we would only pay for drinks after being offered a discount for the two appetizers and salads. They’ll probably say it was a busy weekend in town, it’s peak season, the server was overwhelmed, etc, etc. I understand the reality of how service can suffer when a resort town is bursting at the seams with visitors, but just a touch more guest service and hospitality would have went a long way. Read moreThis is a very special place for both an excellent meal and comfortable atmosphere when visiting the Winter Park area. While there are quite a few great dining options in the area, Volario's is our personal favorite for either a romantic date night or relaxed family dinner. The friendly service immediately makes us feel special, and both the inside and outdoor seating options are comfortable depending on the weather and mood of the occasion. Coming from the heart of Cow Country, we are no stranger to excellent beef, and many steaks around the country have disappointed our discerning taste. That said, the ribeye that was served with the house special at our last visit was the singularly most delicious medium-rare cut of beef I've ever enjoyed. From the lightly charred edges to the succulent red center, it was a beef lover's dream. The red wine recommendation from our server could not have paired better. My wife does not care for dry red wine, but she enjoyed two glasses of the Canvasback cabernet sauvignon paired with my steak and her mushroom pasta. You can tell that pride and discernment have gone into building the menus as well as the preparation and presentation of each dish. There is truly something excellent offered for just about any discerning patron. Lastly, save room for dessert as the options are the perfect capstone to a delicious dining experience.
