Upon entering we were greeted by 2 smiling gentlemen, I later found out it was Clint (owner) and Olin (hard worker and also Clint's Dad). The restaurant itself is very clean and looks like a good BBQ spot should. I can't explain it but its not kitchy or forced. We ordered 1lb moist brisket, 1/4 rack ribs, potato salad and Mac and Cheese. Let's face it...all of those items at any BBQ spot need to be amazing to make it a great meal (for me and the husband anyway) We sat down and dug in. I tried the brisket, then the potato salad, then the Mac and cheese....oh wait let me try a bit of the sauce (not really needed because the meat is so delicious) but that was good also! I was looking for something to not be good or not be amazing but everything was top notch. One of the best things about the food is that you can tell they put love and hard work into it and they don't copy anyone else. The Mac and cheese had a few types of cheese, you could taste the deepness of it and know that its homemade. The potato salad had the slightest hint of German potato salad flavor but still would appeal to the true, country, TX population. Oh, we tried a Range Ball (I think that's what the egg, sausage and bacon goodness was called) all I can say about that is that you need to go get one...tonight. I wanted to make it a proper visit and try Grandma Linke's Peach Cobbler....l really should have had dessert first. My full stomach couldn't give the proper room that Grandma's cobbler deserved but it was the best tasting cobbler I've ever had. How can it be the best? The "crust" is like no other I've ever had. Try it! I'm going back tomorrow to just get some cobbler.

   Read moreAs a Texan growing up eating barbecue from my mom's BBQ restaurant, the standard by which I judge BBQ is incredibly high. Some aspects of the experience always fall short... until today. Linke's BBQ has all I have hoped for and been missing.
We were greeted warmly and offered samples of the German sausage. I'm not a German sausage fan, so I won't review what I don't know. I DO know brisket, and I've never tasted better. The seasoning crust is a perfect balance of spices with just the right amount of salt. The meat is tender and juicy, and when chopped, has the ideal ratio of fattiness for flavor and texture. You owe it to your taste buds to try this brisket.
Linke's pinto beans do not disappoint. Where many restaurants drop the ball on their beans, Linke's gives their pintos the same attention to culinary detail. They are cooked perfectly tender in a lovely complement of spices - not overly spicy or salty. They accompany the potato casserole beautifully.
The well-executed peach cobbler tops off my food experience. Often, the breading portion of cobbler is dry or bland and leaves you searching for a chunk of fruit to make the breading relevant. The breading here can stand alone. It is moist and has an excellent balance of sweet with hint of salt. The peaches aren't responsible for carrying the whole dessert.
The decor is down-to-earth and common for a Texas BBQ restaurant, inside and out. The atmosphere is relaxed and casual. Linke's owners are friendly and welcoming, making you feel like a valued customer.
Having seen how hard my mom worked to serve excellent BBQ, I know Linke's is working incredibly hard, and it's paying off. Do yourself a favor, and give them your business. The only thing that may regret it is your waistline. ;)
