I had the chicken tsukemen (with additional toppings) and i must say that it's outstanding, the taste is surprisingly good. In comparison to old Tomidaya, the soup in this dish is much much more salty (the current Tomidaya is even less salty compared to the old Tomidaya). I was surprised to find out there are chicken meat dice in the soup as well 😂 The texture of the noddle is chewy and the portion is just enough (since I have to finish all the toppings as well), but would be small had I ordered without additional toppings. The noodle here is second best, only after Tomidaya in my personal ranking. Definitely recommended and I'll come back. On the side note, 4stars here is because of the attitude of the Vietnamese female staff in charge of taking order for me (and also cashier). Very inconsiderate of her to show Vietnamese a menu full of Japanese without any explanation on the dishes. When i try to ask her about the tsukemen, her attitude is very unfriendly like she doesn't want customer to ask her anything. AND she didn't properly explain to me even when being asked (since she just doesn't want to waste her breath in customer), i had to ask her AGAIN...

This Mutahiro branch in Ho Chi Minh City is such a blessing. I haven't been to their Japanese locations, but I'm sure this shop serves a similar menu to Torisoba Mutahiro 2gouten in Tokyo. Despite sitting on the more expensive side of the spectrum for a meal in Vietnam, this bowl has a stacked array of toppings and a healthy amount of delicious chiyu. The shoyu blend here is sweet and slightly acidic. Most Vietnamese will still find it a touch salty though.
I also came back to Mutahiro to try their gentei crab tsukemen. The dipping broth had a creamy consistency while carrying a decent amount of crab flavor. Noodles were passable with a fair amount of chew while clinging to this thick broth. The shredded crab meat is similar to what you would find in a "bánh canh cua" in Vietnam. The amount of crab, however, was disappointing. Not to mention that they show a whole crab claw in the menu picture, so I felt a bit cheated here. The deep-fried burdock root kinda reminded me of Zagin in Osaka, but I think it fits better here because it won't get soggy...
