They use pozzetti for a start. The metal cannisters designed specifically for the storage of gelato (the only other place in Sydney that does it is Rivareno).
The gelato is not stacked to the moon like in other ice cream shops that pretend to sell gelato but really sell ice cream (the scientific reason is gelato doesn't use as much cream as ice cream so there's less fat and less air that gets in when churning partly because of less fat and partly because the churn is slower).
They make it fresh and use real ingredients, you can tell the ingredients are real because of the colours, hazelnut is the colour of a hazelnut etc. They also only make what is in season. You won't be finding lemon gelato at the moment (even if you really want it) because lemons aren't in season yet.
It tastes exactly like the gelato you can find in all the small towns across Italy. Not the tourist shops in Rome but real artisan...
