This pizza genuinely brought me happiness. I just moved to Albany within the year and pizza has been typically Little Cesar's, Dominoes, or Mellow Mushroom. All of them were pizza, but none of them felt like a "real" pizza to me for one reason or another. Either the crust is 1/2" thick, it's coated in powdered seasonings for gimmicky flavored crusts, or it's a whole wheat crust that stays chewy after the pizza is served, none of it felt right to me. In a spontaneous craving of a more authentic pizza, I found Gianna's. I will admit I was hoping for a sit-down restaurant, but that wasn't what this was. I was kinda disappointed when I found it was in the back corner of a gas station, but I decided to give them a shot anyway. I ordered a 14" deluxe pizza. The total with a 15% tip came up to just under $20. In 12 minutes, the order was boxed and ready to go. I brought the pizza home and I am so glad that I decided to give them a shot! The pizza was still piping hot, the cheese was melty, the toppings were plentiful and flavorful, and the outer crust was crispy with some char without being burnt. It was the best pizza I've had in months! That size pie should satisfy 3-4 people. I only needed 2 of the 8 slices.
My ONLY critique is that there was a very thin layer of the dough that was probably too wet to cook the crust all the way through. It was minimal, and if it's not already being done, I think a way of stepping up the pizza to that next step would be to experiment with par-baking the crust before adding sauce and toppings to eliminate that final bit of soggy dough between the crisp crust and the toppings. When I say that this was my only critique and that it was minimal, it had little to no impact in my overall enjoyment of the food.
