It’s very hard to find someone who can do a good job of sharpening let alone someone doing it manually which minimizes loss from/change to the blade. I was very impressed with Williams work —. He brought my knife back to life— an early 20th century Carl Evert solingen stainless carver— used it today and it was wonderfully sharp making turkey carving a joy this year. . Equally important for me the blade edge looked very clean and consistent the whole length. Im a metallurgist by training so I tend to look at knives and their blades with a very critical eye. My experience with other sharpening services in the Bay Area has not been good over the last 25 year. All I’ve found use machine grinders which are too aggressive. Most damaged the knives with poor technique and indifference. A Japanese knife shop around San Mateo does an okay job (but again with a.machine) but Williams work looked quite a bit better so I will use him again.
He works out of his home but it was very easy to coordinate, drop off and he was very quick to complete.
He mentioned he’s done a number of Japanese knives so I plan to bring him a...
Read moreI am writing this comment because I just got into a situation from which I do not know how to get out correctly. I work as a chef and for me knives are my tool. which I use every day. By advertising to this person, he asked for $ 24 for each knife for one 36, I didn’t see such prices, but I thought at last I found a professional for good work, it’s not a pity to pay. in the end, I take the knives and he grinded them all for me, and not only sharpened, but also whittled the whole knife on the sides of this, the knives began to get stuck in vegetables, he grinded the other knife so that it became much lighter and thinner because of this, he lost his weight and did not cuts like before, another small knife he just grinded global knives, I am writing this because I am very upset. I needed knives very urgently, so I did not immediately notice all this. my accusations were simply answered: I need to buy new knives. it’s not very pleasant if you take such a price, then do everything right, and don’t add unfinished work. I do not advise giving expensive good knives,...
Read moreWilliam was great to work with. I had 4" Kitchenaid santoku (an inexpensive but beloved much-used tool) and a 6" Wusthof chef's knife that needed assessment and sharpening. I reached out to him via his website and he responded by text and email right away, detailing general cost of services. He's very reasonable and will give an estimate based on the condition of the knife, including a lower price (than base) if the knife is in good condition. I dropped off my 2 knives at his house. He noticed that one needed re-tipping and completed both knives within an hour. The knives are wonderfully sharp. I even could cut through fresh bread like it was butter with them! I plan to go to William for future...
