Today, my family and I participated in the tour offered by the owner, Ken-San. He was very hospitable and eager to share his craft with us. We learned about what makes Shochu different than other alcohols. He showed us his beautiful koji-rice room, his fermentation vats, and his distillery machine. It was amazing to learn about how he sources all his ingredients, and how he tries to use as many local ingredients as possible. My family and I bought the Nami Hana Shochu and the Haleiwa Rainbow Gin. My dad is not a huge gin drinker but even he noted how smooth it was and how much flavor it had. Overall, this was a great experience and I would recommend people to stop by and learn about Ken’s art! I’m excited for his 23 batch of Nami Hana to drop this upcoming September.

If you can get a tour do it. Just go on their website and email him. Ken, the owner, is amazing. It’s just him and his wife and they use a traditional method to distill. He thoroughly explains the process and then provides a tasting of one item. Bottles are more expensive than what you can get at the local stores, but it’s the small batch hand crafted quality you’re paying for. There are no timers, computers, etc here. Everything is done the traditional way with high quality ingredients. Please understand he’s a one man operation and has limited availability for tours. Book way in advance. Or visit between operating hours, currently 1-3 pm, to purchase. Buy local, support local.

Couldn’t resist trying out the local shochu brewery in the north shore. They offer the tour to their production factory however due to the COVID 19, they were unable to offer when we went to pick up bottles we ordered. Each year they grow and cultivate different type of sweet potatoes to make the vintage. You need to reserve in advance as the production is limited per year. This year, many visitors were unable to come collect the reserved bottles. Maybe you can give them a call if you are interested in trying out Japanese shochu

My words will probably not do this place justice, but I will try my best. For those who are capable of appreciating a real artist at work, you will be rewarded with the priviledge of witnessing what I can only describe as magic. This was my first time trying shochu, so I feel I cannot speak too strongly about the quality of the product being produced. That said, we tried his 12th batch and I thought it was fantastic. One thing I can guarantee, is the authenticity and uniqueness of this experience. I have come to admire the wizard responsible for this magical experience, Ken, whose knowledge of shochu was dwarfed only by his respect and friendliness towards his guests.
