I was ecstatic to see this place open, because getting decent mozzarella for pizza in Ocala is not easy. You can buy Boar's Head at Publix for over $10 per pound, or you can drive to Orlando and shop at Gordon Food Service. There is another supply place in Ocala, but the cheese they sell is bad. I hoped Restaurant Depot would have Grande cheese, because it's a top choice for New York pizza.
Oddly, this store only carries Stella and a house brand called Supremo Italiano. The shredded versions contain gritty powder which has ruined other brands of cheese. They only have Stella in blocks. No grit, but it's not Grande.
The block version of Supremo Italiano is pretty good for pizza, especially when cut with Publix provolone. Better than Stella.
Grande makes a very good shredded cheese blend called East Coast Blend. It's 50/50, whole milk and part-skim. It cooks very well. Not too greasy and not dry and rubbery. Restaurant Depot should look into it.
It wouldn't hurt to add Bonta and some additional Stanislaus pizza sauces to their offerings. Saporito would be welcome.
On the up side, they have beef fat for deep fryers at a very good price, along with many other great items, so Restaurant Depot is a welcome resource. Their price for shelled pistachios...

The 3 star is due to their delay in showing up to work to unload as scheduled, putting my next delivery appointment in Kissimmee FL at risk of being late. Tyson sets these appointments to make life somewhat easy. But when receivers do not open as they are supposed to, it creates a ripple in the system that ruins delivery and pick ups of the next assignment for drivers. This warehouse/store knew Sunday I was going to deliver at 6am, the set schedule time for delivery to drop off 4 pallets. I find out at 6am Monday morning they are not going to be in until 7am. Ocala is a growing city. Surely, they can find dependable employees who can show up on time to service their vendors.
Hopefully, they will improve on this to get a better rating from future delivery drivers and possibly an upgrade to my current rating.
