Went in here to get some Wagyu beef for a special occasion and was not disappointed. The butcher was very friendly and helpful. I ended up getting some American Wagyu and some prime costillas. I cooked them up that night.

I used a S/P/G/O season for everything, and let them come to room temp. I rolled smoke on everything at around 200 for about an hour. I then took everything off and got the fire going. I seared up the costillas and took them off. The wagyu ribeye was sitting around 115. I put it on the fire on each side for about a minute, minute and 30 on each side and pulled it to let everything rest.
I finished off the wagyu with some smoked sea salt flakes and sliced it up for serving.
Honestly, I dunno why I go out to restaurants. These days.
The flavor was off the chain. Like, there wasn't a chain in site it was so "off the chain". We all sat there with that "G'ot dayum!" look on our faces.
I dunno what "Prime 1" is at HEB, but I can say, it aint USDA Prime like these costillas from La Carniceria were. My wife said anything less is now unacceptable. So, I guess we will be seeing more of each other La Carniceria.
The American wagyu was outstanding. They had some Australian Wagyu I would like to try also.

Read moreFirst and foremost, I want to commend the cashier for their exceptional customer service. They were friendly, attentive, and made a great first impression. That said, my overall experience with the meat products was disappointing. I truly wanted to believe the positive reviews about this establishment, but the quality of the fajita meat I received fell far short of expectations. The cut was excessively fatty to the point where two large chunks of fat were still hanging by a strip of meat. In this economy, I understand that businesses are trying to maximize profit, but passing this off as acceptable is unreasonable.
Out of respect and the urgency of my day, I didn’t take a photo, but honestly, the visuals would’ve spoken for themselves. What made it more concerning was that the butcher seemed to have the meat already set aside, which made me question whether there was prior awareness of the quality issue. Additionally, the al pastor had seasoning so overpowering that it tasted more like chorizo than marinated meat, which was not what I expected.
I had high hopes, especially as I’ve grown tired of the inconsistency from bigger chains like HEB, but unfortunately, this experience didn’t meet the mark. I truly hope management addresses these concerns with the staff and reevaluates quality control. At this point, I’ll be returning to the drawing board in search of a better local...
Read moreToday I went to look for picanha, or top sirloin cap, but the place where I usually buy it hasn't had any for two weeks. So I searched on Google and found the: "La Carnicería Mexican Market" a butcher shop. Wow, it's a paradise for people who love to eat meat and enjoy it's flavor. You can find everything here! From some diezmillo, chicken, pork, even Tomahawk Prime, Wagyu, etc.
Of course, before going, I called and they told me that yes, they did have it and that they could cut it however I wanted, so I decided to go there. Then I met Fernando and his whole team, Giovanny and Adrián, all of them very friendly and attentive. I also bought pork chops, ranchera meat, nixtamal corn tortillas, and some serrano peppers, like serrano pepper cracklings, which were very delicious. An excellent gesture, a kind act by Fernando was asked if we liked the salsa and gave us some guacamole and a red salsa. Very tasty and spicy! Also some chorizo. So, most likely, I think we'll be back very soon. I highly recommend this place,I assure you that you won't regret it. And of course, I give them ⭐⭐⭐⭐⭐ golden stars. Keep up the great work, guys!
