This is a really neat mead shop with all kinds of bee products available for sale. The mead flite was really interesting because they were fermented out, and force carbonated afterwards. I found the flavor of each one to be very unique in character, and pretty well balanced. As a mead maker, I think each of us has interpreted a little bit of "the old way" and like to put a little bit of our own character into what we make, and I think that's absolutely fantastic. I prefer a still and clear mead with just a touch of sweetness left for mouth feel, and I think without the carbonation you would be so very close.
