As a born and raised New Yorker and now a local food guide here in Aspen, I have to say—this new bagel shop is a very welcome addition. The bagel itself comes impressively close to true New York style. The inside is soft and chewy, while the outside has that crisp bite you want. If I’m being picky, I’d say it could use just a touch more of that classic “plump bounce” you’d expect back east—but realistically, this is the best bagel you’re going to find in Aspen.
