UPDATED 7/9/2023 So I felt compelled to update this review for todos mi amigos at LA Carneceria!! 3 lbs tasajo, 3lbs short ribs, 2lbs pollo. All perfect. Tasajo we prefer as it's a thicker cut and this time around it was simply perfecto!! Tender very lean marbling really very nice quality cut. Short ribs were equally good. Very little fat and good amount of meat.
So, although Mother's Day left some doubt. This visit was exactly what we came to love about this place. end of update
This is a heartfelt review. Mi Esposa and I have been going to the bellflower spot since they opened the doors. The company has had some good growth and success and well deserved. Remodeled and offer free water to patrons waiting in line.
The meat quality (usually) and the guys cutting on the block, folks greeting and checking out make this seem like a family establishment and has made la carneceria a staple for all our gatherings.
Most recently, Mother's Day, busy real busy. A good thing except Service was missed. Employees were worried about breaks and conversations with supervisors as we were checking out and not focused as usual on service.
The meat (prime) tasajo and short ribs unfortunately was tough and chewy. Obviously this can happen at the volume they are producing. A cut can come over with some gristle and chew. We ordered 5 lbs of both so for it to happen across all pieces isn't really normal.
I will always recommend LA Carneceria as there simply isn't a spot to offer the quality of meat. However, I am hesitant to drop $200 + when the quality may or may not be there for that cost. I'm not a butcher but I do understand business and the need to generate business for growth. In that aspiration I hope La Carneceria doesn't lose sight of...

It was super busy when I was there. There isn't a take a number machine, you just wait in line and they call the next person up. There were approximately 5 people ahead of us, we only waited 10 minutes for our turn. While we waited, I was listening to what the other people were ordering. I was also looking at their vast collection of spices, hot sauces, and charcoal for sale. Once the butcher wrapped up our carne asada and pollo asada, we were told to go to the register to pay. The cashier was very nice and gave us a free sample of chorizo and told us to grill it too. That's for tomorrow's breakfast. As for tonight's dinner, the carne asada was delicious. It had a great citrus flavor, the flank steak was so tender and juicy, it melted in your mouth. The chicken was tasty and had a great citrus flavor too. It was tender too. We will definitely come back here. They are also a Japanese registered Waygu beef seller. So if you are into Waygu it would be a place to go.
