I took a whitetail buck to Alamo Meat Market for processing, expecting a straightforward and professional experience. I personally sat down with the owner and filled out my order sheet, specifying a variety of cutsāincluding steaks, stew meat, ground hamburger, and backstrap. I did request some jalapeƱo cheese sausage and dried sausage, but certainly not in the insane amounts I received. Having an entire deer turned into sausage is something I donāt think anyone would do.
When I picked up my order, I was shocked to find that my entire deer had been processed into 40 packs of jalapeƱo cheese sausage and 30 packs of dried sausage. No backstrap, no tenderloins, no stew meat, and not a single pack of ground hamburger were included. Not only was my order completely disregarded, but the final price (even after my $100 deposit) was nearly three times what I normally pay for deer processing.
After realizing the mistake, I reviewed my order sheet and confirmed that my requested cuts were listed correctly. When I brought this up, the owner quickly went into the cooler and handed me a box of meatālikely taken from someone elseās orderābecause the label ink was still fresh and smeared when I touched it. This confirmed my suspicion that my original order was never processed correctly, and a "missing box" was never in the mix.
Iāve processed multiple deer every season and have never had an order so blatantly mishandled. I felt completely taken advantage of, as it was clear they prioritized high-priced sausage over fulfilling my actual order. I highly recommend Kleinās in Boerne or another reputable place.
