Unfortunately, I concur with the other gentleman that recently received and cooked a Heritage turkey, it was the worst turkey I’ve ever had and the most expensive. I sent them a lengthy email and I’ve not heard back. My father is in and stage a method. I wanted to make something very special for his last Thanksgiving so I decided to order an heirloom turkey, and unfortunately, I want to save about 50 bucks so I didn’t order from the other reputable companies, thinking that paying $180 for a 12 pound bird plus shipping and tax would get me something phenomenal. And I am a chef and I have cooked many birds, butterball, fresh organic, organic turkey breast, and I’ve smoked my own as well as roasted, and put one in a fryer. I received a rock, solid, frozen bird that was supposed to have a neck inside as well as the giblets, instead it had additional livers and no neck, and I had to chip away at the ice inside the bird to get to them. It was golden brown when I finished so I had some hope and the white meat seemed to be moist, unfortunately the white meat was tasteless and a little bit stringy with gristle going through it, and the dark meat was very chewy, we too tossed most of the bird out.
