Chef John prepared and excellent four course meal for our party of 12 people. He was very professional and responsive when scheduling our private dinner. He went above and beyond by accommodating for everyone in our group including a last minute add on for our vegan and vegetarian guests. Our first course was a prosciutto wrapped asparagus with a balsamic glaze. The flavors were balanced perfectly and left you wanting more but with three more courses to go it was just the right size. The second course was a Cesar wedge salad with crispy romaine hearts, shaved prosciutto, tomatoes and freshly made dressing. Who knew something so simple could be so delightful. The third course was a stock aged filet mignon which he seared off and a flattop and then finished on our charcoal grill. Every single persons' steaks were grilled and seasoned to absolute perfection and finished with a punch of flavor from the pork loin demi glaze that went on top. Under our steaks was a potatoes au gratin. Need I say more? Cheese and perfectly cooked scalloped potatoes provided a delicious bed for our steaks. And last but not least we had a molten chocolate cake with vanilla bean ice cream for dessert. It was the perfect amount of food. We call all barely finish dessert by the end. To my surprise and his, my birthday dinner was a SURPRISE! Chef John did an amazing job! The dinner was at my Mother in Law's home in the Villages and my husband had invited a few of our closet friends. The ambiance was very festive with birthday decorations, Chef John gave me flowers for the table, he served wine, socialized and took photos with us. He is the best and so personable! After that, we were seated and Chef John served and explained each dish that he had prepared; everything was made from scratch and he used organic ingredients.
