One of my favorite parts of being a life long chef is that once in a while you run into a golden unicorn. Someone that really takes the time and puts in the effort to make things that are really great. This is Jeff.
The rum I bought is aged in oak and mead barrels i think? I'm not usually much of a dark rum guy but holy crap this stuff is good. I spent four years in the US Virgin islands and I love me some rum, I'm going to spend the whole day with this bottle like the good ole days.
Haven't tried the gin yet but I'm super excited to do so....
My favorite part about seven caves distillery is that they are also making real deal maple syrup aged in the rum barrels! What!? I also went to Culinary school in Vermont and will assault someone that gives me corn syrup with my pancakes. The flavor of the syrup is phenomenal, the aging in the rum barrels really shines through without being too aggressive. If I wasn't already a big chef I'd eat this every day. The coffee and cinnamon infused maple syrup, ridiculous. Try it you'll love it. Jeff also makes his own pancake mixes so it's a one stop pancake shop!!
Jeff threw me a curveball, he also makes his own soy sauce! And ages it in the barrels! You want to go do karaate in the garage?! I think we just became best friends. The soy sauce is great, flavor bomb, and I will be using this in all sorts of different dishes.

Read moreMy first time at Seven Caves was December 2024. We went to celebrate our friend’s birthday. Seven Caves is located directly next door to Embolden Brewing Company. The signage is small so keep an eye out. The owner, Jeff, is a riot! We did a tasting that was curated by him and our love for libations. He makes all of his spirits himself. His distillery started with gin which is why I’d never been because I don’t like gin for any reason. I would love to say that I remember the different cocktails that he whipped up for us but we drank a lot and that was months ago. LOL. I can say everything was outstanding! My favourite was this fluffy daiquiri ice (Baskin Robbin’s ice cream I love) flavoured cocktail that was indescribable but so stinking delicious. When our tasting was done we all lined up to purchase bottles. I bought a bottle of rum which was my favourite libation of the evening. Read moreThis place is absolutely worth a visit! We booked a private tasting, and it was so much fun and very intimate. We got a wide range of drinks, and everything we tried was really good. We were there for about an hour and a half. The owner Geoff was able to craft cocktails on the fly, and everything he threw together was fantastic. He asked us what we like, and he used those selections to make masterpieces. Definitely try his canned cocktails, they were the best we've had.
They're dog friendly btw. Something else to note, if you're just looking to pick up just some bottles or cans, you can show up without an appointment. You just need an appointment to do the tasting, but absolutely you should do that if you've never been there before. The only downside, we tried a couple of things that weren't available for purchase. It was a little frustrating, to try some absolutely amazing drinks, and then see that we can't buy that in his store. But I guess that's just good motivation to...
