A Culinary Masterpiece: Musgo in Buenos Aires

From the moment I stepped through the doors of Musgo, I knew I was in for something truly extraordinary. The experience began with the warm, impeccably trained staff who greeted me with genuine hospitality. Every interaction was seamless, exuding a level of professionalism and attentiveness rarely seen. The service was precise yet unobtrusive, making me feel not just like a customer, but a welcomed guest in a space where every detail had been meticulously thought through.

Then came the food—a revelation in itself. Each dish was a testament to the art of fine dining, masterfully blending Patagonian ingredients with Asian influences and a minimalist Scandinavian aesthetic. Every plate was an exercise in precision, each bite an explosion of delicate yet powerful flavors. The ingredients were fresh, the pairings innovative yet deeply comforting, and the presentation—simply breathtaking. Plating was not just beautiful; it was perfect, an expression of balance and harmony that elevated the entire dining experience.

Beyond the food, the restaurant itself was a masterpiece. The space was immaculately designed, with a striking yet understated elegance that set the perfect atmosphere. The ceilings, the lighting, the walls—every inch of the space was pristine, curated down to the finest detail. One of our favorite restaurants in Buenos Aires. We have visited it several times, and the cuisine has always been outstanding — dishes of the highest level, and special thanks go to the chef. It truly is a gastronomic delight.

However, during our most recent visit, a few things left us disappointed. The service was not up to the usual standard. To begin with, our waitress mixed up one of the main courses: I had ordered lamb, but was served fish instead, which had never been mentioned during the order. As a result, I had to wait longer while the rest of the table had already finished their meals.

When my long-awaited lamb finally arrived, it was quite a letdown. I had specifically come this time for that dish, but it felt rushed, as if it had been prepared in a hurry after the mistake. It didn’t match the presentation in the menu photo — instead of being served with a berry sauce, the lamb seemed to be swimming in its own juices. On my plate, everything blended together into an unappetizing mixture of meat juice and berries. Unfortunately, I couldn’t enjoy the dish at all.

Moreover, after that, it felt like we were forgotten. Dirty plates were left on the table for a long time until we had to ask for them to be cleared, even though we had already finished both appetizers and main courses. This had never happened to us during previous visits, and it felt disappointing for a restaurant of this level.

I have eaten in fine restaurants across the USA, Japan, the UK, and South America. While in Buenos Aires we tried two other very famous Michelin starred restaurants before we ate at MUSGO on a whim. And with all honesty this may be the finest meal I've had in my life.

The attention to detail shines through in every aspect. From the lighting to the decor to the music to the presentation, everything was obviously and carefully curated and intentional.

I'd describe the menu as Patagonian Japanese fusion. The food is not cheap but the value is amazing, as we had several more expensive meals in BA that were great but seemed plain in comparison to MUSGO.

The highlight of the experience was being served by Fernando. I can't say enough about him. He was absolutely impeccable in every respect. His recommendations were perfect and it was thanks to him we had a dining experience we will remember forever.

For appetizers we had the shrimp tartar, the scallops, and the sweetbreads. Our entrees were the duck and the japanese tenderloin. Every dish was expertly conceived, presented with care and beauty, and prepared with clear expertise. And Fernando's wine pairings were ideal.

Honestly, this restaurant is, in its entirety, a work of art. If you are looking for a truly fine experience in BA you must go here.

Be aware it's just my subjective opinion.Yours can be different. And overall I suggest to visit yourself and make your own impression. 1) Classic interior for "high dining". Dark, minimalistic grey/black/metal/herbs. Fully opened kitchen in the dining hall, which is not separated by glass or in any other way. Interesting concept. Quite hot inside and you can smell all the cooking. 2) Service is really nice. We had a very friendly young lady, who was helpful, friendly, the right amount. For me best part of experience. 3) We had to wait for the main dishes quite long, more than an hour since we sat down. (Including tome for ordering) 4) Food itself is questionable. It's fresh and served beautifully. But some is good and some is not. As example japanese beef - small unseasoned pieces of beef wrapped in tempura leaf served in watery sauce. (Tasted like 99% of soy sauce, very salty) As you can guess tempura in watery sauce becomes soggy in instant. Overall a full dish of just meat, soy sauce and fried leaf is extremely dull. Another example lamb is served in the small plate with high sides. So you can't cut it while pieces are not small. Tartar was nice though. 5) I was celebrating birthday and was given a cute card with signatures of employees (truly kind). I didn't order a dessert so I was given one.

I tried the eggplant (incredible), the tenderloin wrapped in tempura shiso (perfectly cooked) the cardamom creme brulee (unfortunately a bit grainy). I had a few small issues, the Malbec was pricier than most places which when you already have such good Malbec everywhere felt hard to justify, and because of the nature used in the decor, there were bugs on my table. Besides that I enjoyed my meal immensely and highly recommend!
