6/12/24 2 years later. I'm back at long last. Worth the wait for this absolute gem. The highest standard of genuinely life-affirming food. My favourite restaurant in Australia? I hope they never change. I will be back every time I brave the ornamental pear pollen of our nation's capital.
This time I had the Chaco Ramen Red, Xiao Long Bao, and Chong Quing Popcorn chicken. Sadly the cocktail menu has changed and I wasn't able to get the same cocktail as last time but my Shizuoka was still delightful.
Let me be clear - everything in this bowl of ramen is a star on its own, and the whole far outshines it's constituent parts. The pork broth is so silky and luxurious - the thick and hearty tonkotsu that takes days to cook and a lifetime to master - the way it coats your tastebuds and clings to your ribs is truly an experience to relish in. 3/9/22 Absolutely spectacular. I had dinner here on a casual recommendation, and came back three times in the next two days. The food very literally brought a tear to my eye it was that delicious. For my first visit, I got the Chong Qing Popcorn Chicken, Black Sesame Ramen, and the Ehime cocktail.
My cocktail was perfectly sweet and fresh and complex, I can't do much to describe it but you'll have to try for yourself because it definitely might be one of my favourite cocktails ever.
The Chong Qing Chicken was hot and crisp and incredibly Mala with a blend of red and green Szechuan peppercorns, and dried chilli - a very pleasant level of spice not at all too hot.
As for the Sesame Black Ramen, the broth was thick mouth-coating and absolutely delicious with a deep umami almost earthy flavour - complemented by the crisp pickled bamboo to cut through the richness, served with handmade noodles and topped with the most beautiful jammy soy egg and melt-in-your-mouth thick cut smoky chasu pork. This is the dish that gave me a true religious experience at my table.
Also pictured are the scallops and two of the bao options. Not pictured was the Xiao Long Bao, beef cheek, chicken wings, and vego truffle ramen - all of which I tried at another sitting and can not fault. Absolutely spectacular food, lovely helpful staff, and the chef was very kind and gracious when I asked if I could thank him in person.

Fooderies and restaurants would normally follow a set of trends that would easily mirror the common interests of many patrons, this restaurant is not likely within range of following many food trends from easy meals to luxuriously overrated material; it bends to its own choice of style while incorporating the flavours Taiwanese and Japanese cuisine into its diverse menu.
This stylish mixture of two famously acclaimed food cultures are both invigorating and adaptive when all dishes blend Japanese recipes and ingredients to the Taiwanese varient, thus exploratory and innovative when walking in expecting the unexpected or the expected based on the reasonable stereotype of assuming what kind of Asian based restaurant will serve. Hence why the elegant serve of food is plenty and although small in stature it makes up with serviceable experience met with attentive staff and tasty menu choices which I first felt curious yet uncertain. But it goes to show doesn't it: you can't assume until you've tried it.
The chicken recipes are tender and crunchy with the texture so delicious you'd wish you'd order more. Noodle dishes are plentiful and are usually my first choice along with their delectably iconic side dish of sashimi salmon. These are just few of their outstanding and increasingly engaging menu choices which I will promise you to my enthusiastic opinion is passionate and appealing by presentation both delivery and in-house serving. If you ask me, which you probably are not or if you are, I'm going back for more and it's easy to say you either like it or not, but if it's easy to say both, then it's staggers me when I admit that it's even easier wanting to go back for more when I'm truly immersed by their kind and attentive staff and their diverse range of desirably edible choice of culinary indulgence.
