Hinojuni — Restaurant in Sydney

Came for a ramen. In the past, the ramen has been excellent. Recently the menu has changed to include a bunch of Korean type dishes. Eg. kimchi ramen. I suspect a change in owner\manager.

I ordered the pork chashu Tonkotsu ramen. The broth did not have any tare mix or umami oil. Because of that, it was bland and watery.

The meat was not pork chashu. It was very brown, almost beef coloured, no fat and no flavour. I suspect some braised meat, not port chashu. Also about half the meat that I would expect for a server.

Toppings were half an egg, seaweed sheet and bok choy... bok choy?

Second most disappointing ramen of my life. I will not be back.

got takeaway teriyaki tofu, it was served with rice and salad. service was quick, food was reasonably priced and it was so good! the rice and tofu was nice and fluffy. the onion was good and not to little, not too much amount-wise. i even found a piece of broccoli hiding underneath the tofu and it was amazing! it tasted so fresh and absorbed the teriyaki sauce so well. like, if they just did teriyaki broccoli on its own i’d buy it. it’s that good. the salad also tasted fresh and it was a nice break from the heat of the tofu and rice. however the sauce was a liiiiittle bit salty. would give 4.5 stars if i could, and i’ll definitely be coming back here to to try...

but I clearly saw in your initial response that you were belittling Uber drivers like myself. As someone who brings customers to your business, I expect mutual respect.
