Taste, freshness and natural flavor complexity. Not trying to hard to varies the menu but staying focus on the core values of good food, this is what impressed me. Also thumbs up for using local and seasonal ingredients as opposed to other more “conscious” restaurants chasing exotic frozen gem somewhere in China. And BALANCE OF TEXTURE AND STRUCTURE. (As too many times i have to deal with food slowly turning to clay because theres no lighter counterbalance).
What I ordered: dish with grilled veggies, bread, hummus, two eggs and yogurt with walnuts and fruit.
This dish: great balance of nutrients, especially veggies since “undervegging” will give me anxiety XD. Super generous portion of hummus! I couldn’t finish though (ca.150-200g of hummus). Bread is slightly salty for my taste but pairing with everything else readjusted saltiness, which is nice. Yogurt is desserty light, not too sweet and juicy with the fresh plums.

It is a very sophisticated place without anything pretentious about it. So many amazing vegan options - I ended up ordering the Wok Gemüse with crispy Tofu, amazing! Super crispy tofu, amount of sauce was perfect and the veggies were very well prepared! For dessert I had the hazelnut (hasselnuss) cake - also delicious! A very big portion enough for two people. I'm going to highlight three things other reviewers complained about that I liked: 1- the fit breakfast had such tasty ingredients (esp daikon and cottage cheese), it felt like a healthy take on the breakfast platters other places serve with the variety on the plate 2- the Nordic breakfast was really solid, it looks like it's now a bigger portion than someone else pictured. And we liked the bread that came with it, it seemed like a steamed bread (I wouldn't think of it as a 'pita') 3-we had the chilled cappuccino and found the coffee better than most of the aforementioned excellent breakfast places.
