Alright, Ghent. Takes Thyme. Sounds like a goddamn playground for the palate, right? Forget the tourist traps, the lukewarm mussels and the frites. This place? This place hums with a different kind of energy. A chef who gets it. Not some stiff in a toque, but a conductor, orchestrating flavors like a symphony. Seasons dictate the menu, not some corporate spreadsheet. And you know what that means? Authenticity. The real stuff. She's pulling flavors from every corner of the globe, and somehow, it doesn't feel like some pretentious fusion bullshit. It's honest, it's bold, and it's… well, it's good. The kind of good that makes you forget your goddamn troubles, the kind of good that makes you remember why you travel, why you eat. Takes Thyme? It ain't just a restaurant. It's an experience. And in a world filled with bland, forgettable meals, that's saying something.

It was completely by chance that we went here, but it was a great decision! Most restaurants are closed until 18:00 but Takes Thyme is open most of the day, which is great for lunch or an early dinner. It’s a quiet and calm place, and the atmosphere was very pleasant. The food was delicious, and almost all of the ingredients are made from local farmers and local businesses.

The food, as the name of the place suggests, takes a bit of time to arrive, so it leaves room for conversation while you wait for the food, but not too much that you’re left hungry. Because we arrived in the afternoon the place was empty even when the city was packed with tourists.

Over all we definitely recommend anyone who visits Ghent to eat here, especially if you’re feeling hungry and don’t want to wait until 18:00, and it’s a great place if you want...

We were looking for a nice restaurant away from the busy areas, and I came across this place on Google. The name immediately caught my attention, and after seeing the great reviews, I told my husband we had to try it. I’m so glad we did!

The owner is such a lovely lady, and the food was absolutely delicious—you can really tell it’s made with quality ingredients. The portions are generous too! My husband and I kept talking about how happy we were to have discovered this cozy spot that serves such flavorful dishes.

We’re always on the lookout for great restaurants, and this one truly exceeded our expectations. My husband keeps reminding me to leave a review because he feels this restaurant really deserves the recognition. We couldn’t agree more—highly...
