The place to go on Pub Street. Temple is a large brand in Siem Reap, which bars, clubs and even a hotel, and the brand pretty much started Pub Street. Drinks are well priced before 10pm and after that time, Angkor draft still remains highly affordable at $4 for a large jug or $8.50 for a tower (2.5 litres).
In my opinion, the best experience can be found on the top floor with its free pool tables, beer pong, arm wrestling stations, and large well staffed bar. You will not have to wait long for service. Here you will find a large mix of locals and foreigners, many of whom are regular customers. Music on the other floors can be painfully loud, but I find the top floor (although still loud) is bearable and you are able to speak with people.
Fridays and Saturdays are generally very busy, with other nights, particularly early in the week being pretty quiet. You can make many local friends here by playing pool with them, or just chill out and watch the sport shown on TV. There is also a small area for dancing. The manager is often here and is a friendly guy who will make himself known to you if you are a regular.
Temple is open until 5am, but it will start to quieten down an hour or two before than.
After you leave, ignore the tuk tuk drivers right outside who want to take you back to your hotel for an exorbitant fee like $5. The correct price (and the price you will get via the Grab app) will be around $1, unless your hotel is very far. Turn right and head back down Pub Street until you reach the end, with 7-Eleven over the road. Don’t cross the road, but turn left, and you will find a myriad of Tuk Tuk bars. This is the next spot to go to after Temple, and you will meet all sorts of people here and have a great time, with well priced drinks and friendly locals who will even buy you food from nearby stands. When it’s time to go home, tell the nearby Tuk Tuk drivers $1, or (in my opinion) just get a Grab for a hassle...

3 floors to enjoy some clubbing into the morning. Lots of people on each floor with a different DJ too. Generally playing the same music. Live bands on certain nights according to signs outside. $1 draft beers after 10pm. Staff are fairly friendly. Bar staff are fast. You can get a drink quick, even when busy. You will meet people from all over the world here. Locals come here too. Free WiFi.
It becomes very crowded. It is difficult to move around or dance easily. There are too many tables, couches games and chairs. On that note, if you do not get a table you literally have no where to stand either. Watch your belongings and drinks. The stairs are steep and thin, not easy to walk on even when sober. Beware when consuming alcohol or when others have been. Music is way too loud and the speakers are on the floor right beside you. You can hear this place a few km away. Seems people go pretty hard here, by midnight you will see people somehow sleeping all over the place.
Ask for a receipt for each purchase of beer you buy. Receipts print anyway and there will be less confusion. Dance floors are generally on the 2nd...

The food selection was edible but the starters were somewhat greasy. The salted peanuts and cashew nuts were the best dish. For the main, the pizza was a bit dry but palletable and the crocodile dish chewy. The desserts were not great the carrot cake was dry left uneaten. The drinks were fine. What made us stay longer was the live singer who came on and did some great cover versions of lots of music.
