Muku was recommended to us by friends and we came in to try it on a Sunday afternoon around 4:00 pm; decently busy but the two of us were able to be seated right away with no reservation.
The pleasant smell of the broth hit us right away as we entered; the kitchen is open to the cozy dining areas which is a nice touch. Drink options are fairly limited but typical for ramen restaurants; the beer selection had Sapporo on draft (I highly recommend it) as well as canned Asahi and bottled Kokkanee.
We didn’t order any starters but did have the combo set which added a choice of rice dish and the green salad to the ramen; for this we chose the chashu (bbq pork) rice.
My ramen was the tonkotsu chashu wonton ramen with spicy sauce, corn, and ajitsuke tamago (ramen egg). My partner chose the ninja koku-miso because it was seemingly the only one on the menu which came with bamboo shoots. She added an egg to hers as well.
Overall we found the broth to be flavourful, if a little thin, but the noodles had a decent amount of chewiness and took up the soup well. The serving size and topping portion was very generous. The chashu was really nice; more on the lean side (as opposed to fatty meat) compared to other establishments we have been to.
My partner really enjoyed the green salad which came with a light vinaigrette-sesame style sauce. I loved the chashu rice which reminded me of a nice rice ball in bowl form.

The Ramen is well cooked, the soups tasty, not too expensive - a standard bowl of ramen soup will run you 9 to 11 dollars. But I don't see myself going out of my way to go there again next time i'm in town. I'm not a big meat eater. I realise that when you go to a japanese soup restaurant you'll get broth with a fish and chicken base, and I was willing to put up with that - but not a single ramen dish there had tofu, or just veggies, or something besides big slabs of meat (pork or chicken mostly) in it. So ok, no problem, I picked the simplest one and simply asked if I could have it without the meat and maybe they could just give me a bit more cabbage instead. NO WAY. Oh, they were happy to serve it to me without the meat, but if I wanted extra cabbage they were going to charge me an extra dollar. Are you serious? I would like you to exclude the most expensive ingredient and you're going to charge me a buck for what amounted to 10grams more of the cheapest ingredient. This, I thought, was seriously lousy customer service. If you go there, and you're not a meat eater, you can choose the seaweed salad. that's it. not even on with a side of noodles - it doesn't exist. Another thing is that they won't let you split up the bill - so if you're going with friends, you need to work it out yourself, you cant pay separately . Anyway, that's the deal there now. But since we found this place to be "the best ramen house in Calgary" we always make sure to drop by. . We love the food here. I always order the tonkatsu with wonton and the shrimp dumpling. Broth is a little salty but still ok. The reason im writing this review is because of the experience i just had yesterday, i came there with my family and my mom, so it is quit a big group. But we didnt order anything fancy because we are on a budget. I just didnt like the way the manager talked to me when i paid our bill. I felt humiliated, he came up to our table to clean it up, and he told me that the bill did not include any tip and he told me to add tip next time. Maybe he meant that since we came in in quit a group that they will be doing a lot more serving and cleaning after. There were only 3 adults and 3 toddlers aged 3 years old. I get it that they have to give us high chairs and extra plates for the kids, but isnt that part of customer service? we didnt order anything for the kids because we will just share what ever we order,since kids dont eat much. I just feel that giving tips should not be mandatory, because you dont know where people are coming from. Dont get me wrong,i also work in a food industry and most of the time people dont tip.
