I started with a hearty brown rice base and loaded it up with a colorful medley of fresh ingredients with cucumber – cool, crisp, and refreshing, tomatoes – plump, juicy, and sweet, fresh corn – adding a subtle, summery sweetness, jalapeños – bringing a gentle, lingering heat, Red onion – providing a sharp, tangy bite, black beans and white beans – packing a powerful protein punch.
For the final flourish, I topped it all off with crispy fried onions and selected the tender, savory beef with a rich sauce as my protein. My wife, meanwhile, crafted her bowl with the same base but opted for a chicken fillet, skipping the corn for a lighter, zestier combination.

Now, let’s talk food. I built a custom Sky Bowl with half white, half brown rice and loaded it up with pineapple, peppers, tomatoes, onions, corn, bean sprouts, and their new vegan Thai chicken. I topped it all off with Japanese barbecue sauce and a sprinkle of Asian crispy crackers. The vegan chicken had an impressively meaty texture and soaked up every drop of that smoky-sweet sauce. Flavorful, satisfying, and light—just how I like my midday meals.
But I couldn’t stop there. I also ordered the chicken bánh mì, leveled up with spicy gochujang sauce—and wow. The bread was warm and perfectly crisp, the chicken juicy, and that sauce? Bold, tangy, and fiery in the best way. It brought the whole sandwich together and made each bite seriously crave-worthy. A little messy, but worth it.
And of course, no visit is complete without a treat. I grabbed my favorite matcha oatmeal cookie—soft, chewy, and perfectly balanced with that subtle, earthy matcha flavor. Always a good call.

Skybird has landed in Pierrefonds, and their newest location is a feast for the eyes before the food even arrives. The space is airy and inviting, with wide windows flooding the room with natural light. Wooden structures frame the interior beautifully, while a striking logo mural and plenty of greenery bring a modern, warm, and lively atmosphere.
We sampled a variety of their signature bánh mì sandwiches and the popular nutritional bowls that have helped build their loyal following. Skybird takes pride in its flavour-building techniques — like charring onions for a deep caramelized sweetness — and their array of sauces, which truly elevate each bite.
The bánh mì were solid, with fresh bread and vibrant toppings. The vegan version, however, featured chewy mushrooms that didn’t quite hit the mark for our taste. As for the bowls, while they’re typically a crowd-pleaser, the chicken in ours was on the dry side, which took away from the overall experience.
That said, Skybird Pierrefonds still delivers on freshness, flavour variety, and an atmosphere worth visiting. With a bit of fine-tuning on certain ingredients, this location could easily match — or even surpass — the reputation of its sister spots.
