On the east side of Regina, along Quance Street, you’ll find a slice of France with an atmosphere perfect for squeezing a relaxing moment into your busy day. At 10:00am on a Wednesday, Le Macaron was hopping. As Gilles and I sat and chatted, a steady stream of people came and went, and the more I heard about what goes into making a macaron the more I became fixated on the display of eight delicious flavors. Of course Le Macaron makes more than just macarons, Jacqueline is a cake designer and there are so many tasty looking pastries to choose from - it pays to take your time and examine your options.
It was mind boggling discovering that every month 10,000 macarons are sold here, but after tasting a couple, a few, one of every flavor, it’s not difficult to understand why. Gilles explained that despite the visual complexity of a few of the other pastries, the macaron is still the most challenging to master and create. Making a macaron is not simply about having the proper ingredients, rather the challenge is having the ingredients behave properly: the fineness of the flour, the consistency of the eggs - everything counts. Speaking of ingredients, everything here is made in house with all natural ingredients and to reinforce this point, consider that last year Le Macaron used 7,000 pounds of butter.
Hearing the story of Gilles and Jacqueline and the subsequent growth of their dream was very inspiring, but I was also curious what the future looks like for Le Macaron. Just like any business, keeping up with trends and striving to stand out amongst competitors is incredibly important and Gilles echoed that sentiment with some fun ideas for the near future. Recently, a crêpe station was added and the result is somewhat surprising - or at least the demographic of those excited by the addition is surprising. Pensioners are flocking to Le Macaron to enjoy freshly made crêpes. If you’ve never had the opportunity to enjoy a fresh crêpes, Le Macaron is to perfect place to try one.
