Ms. Saigon in Sherwood Park is a beautifully modern Vietnamese noodle house with much to offer. The space is clean, spacious, and thoughtfully designed, high ceilings, stylish décor, an outdoor seating area, and even a bar. From the plates to the utensils, everything speaks of intentional presentation and a modern dining experience. The washrooms are well-kept, and the service is friendly and warm.
The food, overall, was delicious and clearly prepared with care. The rare beef pho stood out for its excellent beef quality, thin, individual slices, tender and well-prepared. The broth, however, leaned a bit too mild for my taste. Similarly, the satay beef noodle soup was filled with fresh vegetables (which I appreciated), but lacked the rich, spicy depth traditionally expected from a satay broth. Noodles were to soft a bit overcooked. It felt as if some of the boldness of Vietnamese flavors may have been softened, possibly to suit a wider local audience.
A few notes on the starters: the salad rolls were fresh, but loosely wrapped, falling apart upon the first bite. A firmer roll would significantly improve the experience. The accompanying peanut sauce was decent, though I would have preferred a fresher version to match the vibrancy of the dish. The herb plate was generous, with a lovely large slice of lemon and green pepper, though the bean sprouts were somewhat oxidized and could be fresher.
The green tea was a pleasant surprise, flavorful and calming.
Final thoughts: This is a restaurant with strong potential. The atmosphere, service, and quality of ingredients are all there. A few refinements in execution and flavor depth could really elevate the overall experience.

I went back and forth multiple times with two different servers about my food allergies. (Gluten and dairy) I kept asking about different dish options as I am fine to pick honestly whatever I can have, and it kept coming back that there was gluten in them - yet I was left with the responsibility of figuring out what I could and couldn’t have - it would have been helpful, after the second or third dish I was told I couldn’t eat, for someone simply tell me what I COULD eat instead? As this is my first time here, I felt overwhelmed.
The staff does not know what is in the food (a server told me multiple times she didn’t know what was in the dish I’d ordered, then after I got it, told me to “avoid eating” some parts because she wasn’t sure if I could have it - and we were still charged for it…) My chicken dish made “gluten free” was served with no sauce. Completely bland and unseasoned chicken, with some onion and a few peppers. I had asked for coconut rice (twice, and at an extra charge) and I ended up with normal rice - when I let them know, we still ended up being charged for that too. My partner’s dish was meant to be “spicy” and wasn’t at all, with those cubed frozen veggies and barely any seafood to rice ratio.
