Danbo Ramen rounds out the top tier list of most favoured ramen restaurants in Vancouver. I will admit it took me two trips - one to the location at Kits and the other on Denman before I could really put my finger on my feelings.
Danbo’s specialty and focus is their Fukuoka-style tonkotsu ramen. With four different options - original, shio, miso, and negi-goma (sesame + green onion overdrive), along with extra spicy or chasu options, and a parallel copy menu for vegetarian/vegan friends, it was a little daunting to choose. Their additional option to add items like chasu or atsuage (tofu) made it even harder to choose. In the end, I opted for the original on the first run and the negi-goma on the second. I also got extra noodles halfway through my meal to taste the difference between their thin and thick noodles.
Overall, I was impressed. Their broth was a rich soup that was flavourful yet balanced. The noodles were distinctly Japanese-sourced (and might I recommend getting the soft noodles as the standard firmness was harder than I was used to). The chasu was excellent quality. And for the price I paid to eat, I believe this was the cheapest of the three big ramen establishments I had tried.
Overall, this was a wonderful experience that perfectly hit the balance on all strides. I would highly recommend checking out Danbo if this is your first time in Vancouver (if you don’t have Danbo in your area) as this will likely give you a good indication on what you value the most about ramen and noodles in general. Also koodos to the Kits location for having the Yelp waitlist functionality so we didn’t have to wait in-line for 40 minutes.

Read moreI have been to Japan over 15 times and ate a lot of ramen in Japan. This ramen broth is the best in Vancouver, BC. Considering we are in North America, this level of broth flavor is extremely delicious, fresh, and on point. It is clear and not overly oily. The noodles thickness and texture are near perfection. I didnt customize my chaosiaw or pork - when served, the pork are sumptuous and not fatty. It’s fresh and I didnt need to pick the fat apart - they just melted in my mouth. And no porky residual taste like some other establishment had the after taste from frozen pork. I also ordered a spicy noodle. The spice level is perfect. As someone that appreciates spice, this spicy soup made me think of my South East Asia roots. I had to order a second serving of noodles. The noodle came hot and flavorful as well.
After eating many gyoza in Vancouver and in Tokyo, this place did the right pan fried style. The gyoza came out just cooked and skin are not charcoaled. I had to order a third set to try the consistency. Came out piping hot and perfectly done. Unfortunately my phone didn’t take good photos of the closed up.
Just want to end with the staff. They are Japanese gold standard: team work, hard working, consistent, smiling even when busy, cheerful even when packed, swift, and they acknowledged the long wait time. Read moreFirst of all I’m a noodle addict and I couldn’t wait to try ramen in Vancouver. We were told by a waitress at an other restaurant, that city this was the place hands down.
As you approach this cute little spot you see the lineup of couples huddled in the cold stretching down the block to get in. Although chilly outside no one can resist a tasty bowl soup, not to mention “the best ramen” in town. So we park, placed our name on the list and waited about 25-30 mins. (I’ll be honest we tried to go a few days prior, yet I feel it being on a weekend the traffic picks up so it was a much longer wait then a weekday choice.) Half the battle is the size of the cozy little place as it only appeared to have 6 seats for those to come in eat quick and be on their way. Yet I will tell you once we got in, we were very excited and it was definitely worth all the hype aaaand the wait.
You can’t beat a good gyoza to pair with that tasty soup so definitely try them out as you wait for your delicious bowls. We chose the curry ramen which was exceptional in flavour and all the favourites it comes with. The soup was so good and not being from Vancouver we couldn’t chance the wait as to the next time we’d be able to try such a yummy bowl we decided to double down for another. They offer amazing options for those vegans or mindful eaters out there, which is great for those with the alternative dietary choices. The staff was prompt and kind and a pleasure to deal with.
