After hearing positive experiences about Fusian Experience from family and online reviews, I decided to give it a shot. Overall, the experience was quite poor; I would never go back, and I wouldn't recommend the place to anyone to try.
We started the night with a half dozen of their Pickle Point oysters on the half shell. I love east coast oysters, and being able to sit at a raw bar in New York or Boston (B&G Oysters, in particular, in Boston is always a good place for fresh oysters) is generally a fantastic experience. The oysters themselves were fresh enough given that they had to be flown in, but the way they were served was just wrong. Oysters on the half shell should always be served iced cold, on a bed of crushed ice. A room-temperature oyster is never pleasant.
We tried the wagyu tartare. Wagyu, being a premium cut of beef from Japan with extensive marbling, should be rich and flavourful. Yet, the resulting tartare was bland and uninteresting. Given the fat content of wagyu, there needed to be a significant amount of acid in the dish to brighten it up. In a traditional French-style tartare, that would be accomplished through the use of capers, cornichons, mustard, lemon juice; in this case, take your pick of any acidic ingredient, and some salt, and it wouldn't made the dish better. The "Bechamel cream" was a confusing component as it tasted like egg salad to me and I honestly couldn't understand what the intent of that would have been. And it was served with store-bought melba toast.
The "sushi egg benedict" was a small crab cake, topped with king salmon, a poached quail egg, and an avocado hollandaise. In concept, this dish sounds like it could be great. In execution, it was bland (the quail egg needed a fleck of finishing salt, and the hollandaise needed acid), and the crab cake was unpleasantly fishy and unappetizing.
The sushi lettuce wraps were a confusing dish to me. The lettuce was room temperature when I expected it to be iced cold, the rice mixture was warm, and the salmon sashimi on top should have also been ice cold, but was also room temperature. But mixing the three temperatures together and you get this slimy, room temperature mess that was very unpleasant to eat. I had one bite and did not finish it.
They also had otoro at $10 a piece. Otoro is my favourite cut of fish, and I just recently had some delicious otoro nigiri at a Michelin-starred omakase meal in San Francisco, which was perfect. I was excited to see a restaurant in Winnipeg bring some of this premium grade fatty tuna into the city. The same criticism I have above existed with this one - the fish itself was an odd temperature; slightly warmer than room temperature. Sashimi or nigiri, especially at this premium quality and price, should never hit the palate as slimy and warm. At $10 a piece, it was a shame.
Overall, the experience I had at Fusian was poor. Their own website states that they are the number 1 rated sushi restaurant in the city, which I would disagree with...

My colleagues and I went to the Forks for lunch a couple of days while in Winnipeg for a conference. It is somewhat of an elevated food court experience, with lots of diverse food options in the building.
Each restaurant has a unique ordering system, where they will call or text you when your meal is ready for pickup. There is also ample seating, both inside and outside the building.
I opted to try Fusian both days, as there were various items I wanted to try on the menu.
The first day, I tried the salmon and tuna poke bowl. While it was fresh, the portion was quite small, with very little salmon or tuna. The other ingredients were more basic than expected - regular salad mix and canned corn, for instance. Definitely not a standout poke bowl. The meal also included miso soup, which was lukewarm and lacked flavour.
I still decided to give them another try the next day, and ordered the chicken tan tan and spicy salmon rolls.
The chicken tan tan was definitely more flavourful than the poke bowl. It had a nice peanut broth, decent toppings and was piping hot. While the portion of chicken was decent, my only wish was that the chicken was not breaded, as it was totally soggy in the bowl of soup - I pulled off the breading before eating it.
The rolls were served as a 6-piece order and included wasabi and (pink) ginger. They had decent flavour but were not anything special - as much as could be expected for a "food court" style meal.

My friends just took me here this past weekend as it's their fave place to eat in Winnipeg. They have been telling me how amazing the food here is but I honestly didn't believe them until I went there. Not only was the food delicious and beautifully presented but the service was spectacular as they are very attentive. I tried their new Aburi trio and it was sooooooo good, as well as the Golden Roll the flavour was just perfect and the fish quality is VERY fresh, you can tell that they use top quality fish. The price is very reasonable for what it's worth, I have been to other places like Wasabi and Yujiro and this is beyond better! You are definitely getting ur money's worth here, I mean it's not cheap but trust me on this one you really get what u pay for. So for all you people out there that don't want to spend and just want something cheap then this probably isn't the place for you.
