"剛才在一步步遇到一個客人,覺得好面熟,原來是另一間素食店的廚師,然後發現大家是師兄妹,覺得緣分很有趣。" 珈琲師一念,轉身,打開櫃門,一靜,抽出一瓶豆。 "也門。也門豆品質參差,時常有四分之一給我挑走,遇到較好的,很講緣分。 挑出一粒放在手掌:"這粒豆纖維化,會影響味道。有人覺得不就是一粒嗎,幹嘛執著?但能夠做的,我就做到最好。" 手一拋,丟掉。 看著珈琲師專心注水,是欣賞珈琲的開始:"啊!好香啊!"。 端上桌,"這是你的緣分。" 喉頭一陣順滑感,然後回甘從下而上飄起,不散。 聊起珈琲師對品質的堅持,與客人價值觀之間的落差。 中間小插曲:訂了豆沒依時取豆的客人來到,那包豆已被珈琲師處理掉,不賣,對方悻悻然而去。 "要對得起那包豆。就算因為執著而失敗,也好過從俗而失敗。" 點頭,執著,自有知音人。 "剛才稍稍被打擾,我想第二杯可以彌補一下。" 轉身,打開魔法門。 "喀麥隆。我給你做濃一點。" 改用法蘭絨濾布 Nel Drip。注水,珈琲沒像用濾紙般快速流出,停留了一下子,頭段不要,尾段不用,只取中間。 "頭尾都不好,只給客人最好的。" 喝一口:"雖然較濃,但沒有也門的 aggressive,有一種沒有預期的甜味。" "這是醇厚的甜,不需要 aggressive,因為這杯喀麥隆的任務是要撫平剛才的瑕疵。" 會心一笑。 溫度稍降,剛才的甜沒了,一種實在的苦取而代之。 "任務完成,這才是它的真身。" Sensitive 的珈琲師,像魔術師、像醫師,以魔術手法為客人 tailor made 最合那個 moment 的一杯心藥。 ----------------------------------------------------------- 2018.05.03 西貢舊墟的日式職人:BEI Coffee 米珈琲 - 珈琲専科 非常有性格,門外的"顧客須知"沒在客氣: 只供應珈琲、放下手機、沒有"顧客永遠是對的"。 只有珈琲師一人,選坐吧檯。 Menu一面是"須知",另一面才是珈琲list。 請珈琲師介紹。 問明口味,介紹了幾款。 Ninety Plus 以紅字標示,嚐新癮發作,就這個。 一邊沖泡,一邊說明: 水溫98度跟92度的分別、炒豆2天共120分鐘、炒後再把瑕疵豆挑出來...... 職人的堅持。 "好的珈琲豆,放冷了不會酸。" 對,而且還有種aftertaste的甜,珈琲師形容"如蔗糖般厚", 信焉。

Interesting focus. They have 16 single origins, mostly medium/dark roast. So not 'tea-like', thankfully. Almost all pour overs. No expressos. No sugar or milk - only black. Almost no food. My Tanzania was good. 70hkd. Atmosphere-wise, not great compared with other top coffee shops, including the air. Still, I enjoyed myself and I will go back to try more of their coffees.

Amber Base ( Multi-roasting Series) → Ninety Plus " Kambera 間唔中會入西貢嘅我已經知 ❨米珈琲❩ 好耐, 入坑手沖只係短短兩年幾!近呢半年飲❨黑咖啡❩手沖多左。無幾耐之前諗去唔去→米珈琲試下?記得幾年前經過門口有深刻印象。。 所以入去嘗啡之前餵飽個肚先 ❨純飲咖啡店❩,甫入內已經叫我望手則🤣我無問題就坐底消毒雙手再睇飲咩☕..坊間常叫Fruity or Nutty店主兼啡師就好耐心介紹(甜/酸/苦)←我也突然失憶😅🤣😂有上過Cupping ☕耐心等候離遠聞到咖啡香😋落枱聞多次快手影左兩次相就熄左部電話 (Amber Colombia留番下次有機會再影😆😂☕) 第一杯我點Ninety Plus Kambera 入口感覺醇厚。甘香微苦 (我當自己去左旅行“發呆” ) 店內帶點懷舊日式珈琲屋風格. ..飲完隔左陣我就想叫多杯,今次表明想飲甜感重啲😜 老闆就問我要唔要試特别啲(當然好啦😆😍) .. 因為唔想又揀同一隻豆所以揀左Amber Colombia用透明杯連同琥珀色嘅咖啡已經好期待!!每飲一口都令人驚豔😍😍😋非常特別亦非筆墨可以形容❨❨要親身體驗☕❩❩其實每個人飲出黎嘅味道都會唔同😝😋😅 老闆出奇地健談❨❨關於咖啡嘅事❩❩亦學到新知識,下次要再黎嘆咖啡!! 可以放鬆身心當自己又去左旅行嘅地方(會慢慢嘆啡兼唔睇電話) 日本舊式珈琲店風格 →介紹日本☕職人文化 →沒有熱情招呼的老闆..沒有特別的裝潢與擺設 →沒有太多選擇*只有幾種烘焙☕方法*..有的只係讓人自由獨處的咖啡時光(沒手提電話嘅年代) →大概係無賣吃的除了咖啡之外,幾乎沒有別的選擇 →專心一意整靚啡(手沖/虹吸☕) 手沖咖啡脫離機械化、規格化的製作過程,追求個別化、特殊化和風格化. 從店主人所選的咖啡豆、烘焙到沖泡的方式. 不管使用虹吸式還是濾網一杯咖啡蘊藏的不只是工作而已,還是店主人的專業與熱情、這就是「職人」精神。

Interesting focus. They have 16 single origins, mostly medium/dark roast. So not 'tea-like', thankfully. Almost all pour overs. No expressos. No sugar or milk - only black. Almost no food. My Tanzania was good. 70hkd. Atmosphere-wise, not great compared with other top coffee shops, including the air. Still, I enjoyed myself and I will go back to try more of their coffees.

Amber Base ( Multi-roasting Series) → Ninety Plus " Kambera 間唔中會入西貢嘅我已經知 ❨米珈琲❩ 好耐, 入坑手沖只係短短兩年幾!近呢半年飲❨黑咖啡❩手沖多左。無幾耐之前諗去唔去→米珈琲試下?記得幾年前經過門口有深刻印象。。 所以入去嘗啡之前餵飽個肚先 ❨純飲咖啡店❩,甫入內已經叫我望手則🤣我無問題就坐底消毒雙手再睇飲咩☕..坊間常叫Fruity or Nutty店主兼啡師就好耐心介紹(甜/酸/苦)←我也突然失憶😅🤣😂有上過Cupping ☕耐心等候離遠聞到咖啡香😋落枱聞多次快手影左兩次相就熄左部電話 (Amber Colombia留番下次有機會再影😆😂☕) 第一杯我點Ninety Plus Kambera 入口感覺醇厚。甘香微苦 (我當自己去左旅行“發呆” ) 店內帶點懷舊日式珈琲屋風格. ..飲完隔左陣我就想叫多杯,今次表明想飲甜感重啲😜 老闆就問我要唔要試特别啲(當然好啦😆😍) .. 因為唔想又揀同一隻豆所以揀左Amber Colombia用透明杯連同琥珀色嘅咖啡已經好期待!!每飲一口都令人驚豔😍😍😋非常特別亦非筆墨可以形容❨❨要親身體驗☕❩❩其實每個人飲出黎嘅味道都會唔同😝😋😅 老闆出奇地健談❨❨關於咖啡嘅事❩❩亦學到新知識,下次要再黎嘆咖啡!! 可以放鬆身心當自己又去左旅行嘅地方(會慢慢嘆啡兼唔睇電話) 日本舊式珈琲店風格 →介紹日本☕職人文化 →沒有熱情招呼的老闆..沒有特別的裝潢與擺設 →沒有太多選擇*只有幾種烘焙☕方法*..有的只係讓人自由獨處的咖啡時光(沒手提電話嘅年代) →大概係無賣吃的除了咖啡之外,幾乎沒有別的選擇 →專心一意整靚啡(手沖/虹吸☕) 手沖咖啡脫離機械化、規格化的製作過程,追求個別化、特殊化和風格化. 從店主人所選的咖啡豆、烘焙到沖泡的方式. 不管使用虹吸式還是濾網一杯咖啡蘊藏的不只是工作而已,還是店主人的專業與熱情、這就是「職人」精神。

The first thing to state is that I have not ordered a single cup of coffee from this store, and the following are the sole reasons why my family and I left the shop within 5 minutes.

Firstly, there is a strict policy where you are told to read a piece of paper, which states that no phones are allowed inside the shop, and that coffee is only meant to be enjoyed itself. That policy itself I was fine with; I somewhat agree that coffee should be distraction free and enjoyed thoroughly. The catch is, you are immediately met with bleak, blank hospitality. This is also displayed by the fact that the “guidelines” are written on paper and not verbally explained by the staff member. If you are so strict, why not present it nicely and with some hospitality?

Secondly, the price. I get it, they roast the beans for you on the spot and they are all specialty coffees, but $150-200? Really? For one cup? Most cafes/roasters that offer hand drip pour overs cost around $70-100+, which I still believe is expensive (as I have a pour over setup at home) but $200 is really a push, even if they roast it for you.

Thirdly and finally, as I stated earlier, I really want to emphasize how important hospitality is in a cafe, or any store. Drinking coffee is usually meant to be a relaxing activity, while you are immediately met with tension between you and the staff, with their strict nature. In fact, we tried to move the 2-person tables next to each other to ease communication and reduce distance, and within 5 seconds the staff member retaliated rudely.

The only positive is that the place looked amazing and welcoming with a variety of decorations and nice music, yet the staff felt like the opposite. I feel like no matter how delicious or perfect the coffee is, I would still feel unsatisfied for this reason.

The lack of coffee knowledge displayed by the staff was truly disheartening... I had hoped to engage in meaningful conversations about coffee, but my queries were met with blank stares and an overall lack of understanding. It's incredibly disappointing when you are unable to have a discussion about the very thing the establishment claims to specialize in.

Furthermore, the atmosphere and decoration were equally subpar. The ambiance was dull and uninviting, making it difficult to relax and enjoy my cup of coffee. The lack of attention to detail in the decor further added to the negative experience.

Based on my visit, I cannot, in good conscience, recommend this coffee shop to anyone. If you're looking for a place that truly understands coffee and provides a welcoming environment, I suggest looking elsewhere. Save yourself the disappointment and avoid this coffee shop...

Been there for a couple of times, the shop’s philosophy is more of serving coffee than serving ppl. If you are a coffee enthusiast you will get the experience of having a nice cup of coffee. I think most of their coffee beans are dark roasts if my memory serves me right. For those bad reviews about customer service, you guys need to read the shop rules before you enter the shop, seriously, read it before you enter, it’s there for a reason. This is not a shop for desserts, chit chat or other stuff that’s non coffee related. You are a guest who gained permission to enter that space to drink a nice cup of coffee, that’s already a privileged position you are having. Respect is paid to those who equally respects others.
