Japanese ramen chefs. Always a line up. Decided to give it a try. Characteristics: Customizable order; can choose soup base, condiments, amount of oil and how well cooked you want your noodles. Rather uncomfortable high-chairs/bar chairs, especially for smaller people. Soup: Went for their signature fish/pork bone broth. Thick. The fish flavor dominates, rendering the soup sweeter than I preferred. No fishiness. I would have preferred a more savory broth. Noodles: Decent flavor. I went for the hard noodles, but I suggest going for the normal ones. Meat: Chunky. Flavorful. Well-marinated. I would've appreciated its sweetness more if the broth was more savory. Condiments: Thick, sticky yolk in the onsen tamago - nice! The soy sauce/dashi stock really permeated into the whites of the egg. Bamboo shoots, seaweed. Summary: Broth was distinct and with a try. Read moreI had Ramen Taifu saved on my to go list for a while and every time it had a long queue. But I finally mustered up the patience to try it and no wonder there’s a long queue! Ramen Taifu really lived up to all the positive reviews! The ramen is the most authentic I’ve had in Hong Kong so far as the chef is full Japanese and brings the taste of Japan, to the streets of Tsuen Wan! The soup base was bold and flavourful! And the noodle quality was very similar to japan, and had great texture. The char siu was thickly cut and full of flavour. The egg was the best part. Well marinated and soft and gooey on the inside. Absolute perfection! The staff are friendly and accommodating and the eating environment small and cozy, they all have traits a good Japanese ramen restaurant has. Managed to get a seat in the corner and the staff were really friendly. As the joint is quite small, they have a hook for your bags and they push your stool seats into the tiny bar tables.
For ramen, I tried the pork broth with fish which was really nice and the ramen was tasty because it hung the thick broth well.
