We had a fantastic dinner last night at eVala 1903. It only opened a few days ago, so the word has not gotten out yet, hence it was not busy, but it deserves to be. The decor is lovely and the open kitchen looks very swish. There's a good choice of wines on the menu for all budgets. We fancied most dishes on the menu, but with a recommendation from the waiter, we opted for the Stone bass Ceviche and pasta stuffed with ricotta and prawns in a bisque topped with crispy chicken skin. Both dishes were beautifully presented and, importantly, tasted delicious. The pasta was absolutely perfect, and we mopped up every last bit of the bisque with bread. It was a very good start. The mains of beef rib and butternut gnocchi, lamb, and pea were also delicious. The caper sauce with the lamb was rich and perfect. I asked for the jug to be left. The pave potatoes crisp on the outside and buttery in the middle. The lamb cooked well, and the peas, sweet and fresh. My husbands beef rib was tender, and the fat rendered. The gnocch, plum and apple, and red wine sauce great. We took a break and then went in for dessert. Caramelised chocolate mousse with cherry and pistachio crisps and fig with lemon ice cream, olive oil sponge, and fresh figs. Both were very nice, but for me, the staters and the mains were the stand-out dishes. The service was friendly and with a bit of funny banter. 😁 we were also asked for some constructive feedback from the chef. I had no criticism, only that a tasting menu option would be great as it was difficult to pick from the menu as I wanted to try most things. Prices are very reasonable, and the quality of food exceptional. 2 starters, 2 mains, 2 desserts, 1 bottle of wine and Sparkling water EUR134.00 It was lovely to hear the story of how the owner went on to enter and win masterchef 2021. We thoroughly recommend eating here, and it was our stand-out meal during our 2 1/2 week trip in Croatia. We ordered a plate of kebab for two and a beef kebab in a wrap. The food was simply the best, the ingredients were top quality, and I especially appreciated the balance of meat and vegetables.
I would also like to highlight the exceptional service. Every time we visited, we were welcomed by a sweet and friendly hostess. On Thursday, 7th in the evening, and Friday, 8th in the morning, we were lucky to be served by the most professional waiter. He answered all our questions, adjusted dishes to our liking, and was attentive without ever being intrusive. It felt as if he had the perfect instinct for when to be present, yet you hardly noticed his presence otherwise. Always polite, positive, and calm, he gave us a real sense of peace and reassurance. We truly enjoyed his company and assistance.
Unfortunately, he set the bar so high that the latest waiter we had here didn’t quite meet our expectations. He was polite and nice, and he did adjust our order and make some exceptions, but certain small requests were handled with hesitation or unnecessary delay. For example, a simple request for tissue paper took quite a while, and when we asked to add a bottle of water to the bill, his first reaction was to refuse. Only after we repeated the request did he do it, but in a way that made us feel a bit unwelcome.
I believe that even if something cannot be done exactly as a guest asks, a good waiter should offer alternatives rather than just saying no.

We gave the feedback to the waiter, and waiter said it’s because of the mistake of the chef in the morning. While they didn’t tell us there’s a mistake about the beef that day when we ordered it, which is not honest to customers in my opinion since they already knew there was a mistake in the morning, they didn’t fix it. Also they didn’t give us discount even they made this mistake. The octopus I ordered was also tooo salty, I feel they made the food that salty on purpose, so people need to order more water to drink which was 6 euro per bottle.
