Italian, Neapolitan, Elevated.
For background: I am Italian-born, well-travelled, a foodie, and apparently in the top 10% of reviewers (according to Google), also a former restaurateur. I discovered this place while out and about this morning and decided to check it out.
Davide and team should be really proud of what they bring about in the culinary scene of the city: authenticity, innovation, creativity, professionalism, relentless attention to detail. A Refined experience brought about by a creative and visionary.
To me, Everything, not just the food, has been crafted and delivered with attention to every little detail. The Neapolitan hints in the decor are the right level of prominent, while avoiding cliches. Same with the playlist chosen as ambience music, which was not loud and allowed for casual conversation. Davide really has taken "hygge" to heart and elevated Italian and Neapolitan food with it. Service is fast and never rushed.
I ordered: Corvina Crudo - raw fish! you read that right, not many people know that Italy has a tradition of raw fish too. It's a testament to the chef to offer this as part of his menu. The flavours were spot on, paired with the crunchiness of puffed barley and zestiness of lemon peel.
Mammola alla Romana - this was from the selection of "specials" - The chef reinterpreted and elevated this classic artichoke-based dish from Rome with a few personal touches and it really delivered on flavour and presentation.
Veal Cheek and Celeriac (braised) - don't be fooled, this is one of the tastiest cuts of beef - and for any meat-eaters it should be included in their choices. served on a delightful celeriac puree and hazelnuts crumble.
Finally I chose the blood orange sorbet as dessert: a great way to finish this experience :-) - really delivered on the flavour of the main ingredient - Sicilian blood oranges on nibs of bitter chocolate which provided contrast in flavour and texture.
Honestly I can't fault this restaurant, staff, food, or experience, and other reviews I read fail to understand how genius this restaurant truly is! I even went to the toilet just to check how it was designed, and granted this is prime estate in Copenhagen so it was a bit small but boy it was really well curated. 10/10! Will definitely be back to try other dishes.
This restaurant also offers an "omakase" option --- "fidati di Davide" and honestly it is probably a good idea...

I don't think I have other words to describe our experience at paesano.
We went there Saturday evening and got the kitchen counter seat (highly recommend if you want to see the magic happen)
The service is amazing, we were served by 2 different waiters and one of the chefs during the whole meal, all of them were super attentive and very informative.
We had the "Fidati di Davide" menu cause we couldn't decide what to get. They had a special on the board that we really wanted to try (zucchini flowers) and we asked if we could have it with the menu and they kindly included it.
Fried polenta Montanara Focaccia Cheese spread with olive oil (don't remember the name) Rosted Eggplants and tomato Green peaches Fried zucchini flowers
Ragu Alla genovese Cavatelli with green peas
Beef cheek with red peppers and smoked cheese spread
Delizia Al limone Pastiera ice cream Coffee and chocolate/hazelnut salami Digestive snack (very much needed)
4 glasses of wine
We left the place as full as you can be.
The only dish that I did not love was the beef cheek, but it is due to the smoked flavor profile it had, which is generally too intense for my personal taste.

Read moreVisited in April 2025. We tried the Montanara and polpo and potatoes from the regular menu, plus a farinata con sarde and trippa from the daily specials. The food was interesting and tasty, although I personally expected more from the fried minj pizza. The octopus dish was amazing though - served still sizzling, and with all its ingredients cooked perfectly. I love octopus and I believe this was the best octopus dish that I have ever tried. Service was very good - the waitress was both friendly and professional, and she explained the menu before taking our order. The restaurant itself is nice, and the under-the-table hidden cutlery system is pretty cool. The restaurant got a bit loud though - I guess a combination between the acoustics, the music, and a large group at a nearby table. I would recommend improving the drinks selection - whike there are lots of good options for wine and a few options for beer and cocktails, some craft sodas or some mocktails would be nice to have.
Overall, I can recommend Paesáno, and I'd happily come back for more octopus and trying out new...
