Taking Copenhagen's world class level on the food scene into consideration this new bistro didn't impress as much as hoped. The people behind have wanted to create a Copenhagen based French bistro, but their style and choices seem old school. It is sort of OK that bistros in France remain traditional in concept because they have existed for a long while, the audience is different from the Copenhagen one, and even these places adapt a bit to the present. The Silberbauers have created an aka French bistro with red and white squared cloths (already a warning) with an overweight of meat dishes. The bread is baguette, not a controversial choice, but this one was boring compared with how much top notch sourdough bread that Copenhagen can offer at the currently incredible amount of high end bakeries. No experimentation with vegetarian dishes is surprising considering the audience in Copenhagen and current times. Our pescetarian main dish was too straight in the expression and too simple in taste. Slightly oversalted cod, blue shell mussels, mushrooms and stock sauce were all the same sort of taste. We missed something fresh, spiced or light.
The restaurant was full that Friday at lunch time where we visited, but the kitchen didn’t seem capable of serving all dishes in time. We simply waited too long on our main dish. Read moreThe best restaurant in Copenhagen! The place is not big, so it is better to book ahead. The menu was written on a black board, and there were not many options. I guess it was because the chef changes menu regularly depending on what ingredients he gets, and that just makes the adventure more fun! The oysters were very fresh. I had never tried it with squeezed chilli source, but I think it went well. The chilli source was not spicy (to me), and instead it gave you a special fresh flavour. The starter white fish sashimi with fermented chilli and organ juice. It may sounds wired, but the taste was actually very impressive. Another starter “veal tongue” also surprised us. It was a warm dish, the meat was very soft. We had “sweetbread” and “Angler” as main courses, both of which were rare ingredients and and our first tries. They were surprisingly good and very worth the price.
The waiter and staff were very friendly and helping. You can feel they work in a very good environment and like good friends.

The welcome was warm, but the friendliness and focus were exhausted after going through the Danish menu with us. If you make the mistake to out yourself as a tourist, or rather unimpressed by their (to be fair) quite extensive natural wine menu you’ll soon feel like a second class guest. While the tables around us were showered in attention, our lunch flew by rather unattended. The low point, after we weren’t asked once if we want more or something else to drink with the food, was another bottle of water being served instead of the requested bill. Just to charge us another 25 kroner for a bottle we didn’t have the time to finish, while the wait for the debit machine took what felt like purposely long. Behavior you would expect at a tourist trap downtown, but definitely not Michelin recommendation worthy.
