What a disappointment this place was. We saw a table available on the terrasse and sat there as you do 99.9% of the time in France. The waiter came and asked us who seated us to which i replied we did ourselves. He became rude, said it was full and we always had to ask inside to get seated, which was fine up to this point but then as he was leaving he added ‘it is a matter of respect’. We were not disrespectful (as mentioned in France you seat yourself on a terrace 99.9% of the time) we apologized and got up hence disrespect was from the server who needlessly added a rude comment as we were leaving. I had been to the Chistera before, but this time I decided to have my Christmas Eve lunch there. A charming welcome, with very competent and professional service (with a BIG smile) throughout my meal. The whole team is visibly made of "the right stuff" with truly excellent and authentic cuisine and food. je fais le tour de France des spécialités culinaire régionales. après quelques recherches, je choisi ce restaurant et son menu traditionnel, soupe de poisson, piperade avec jambon de Bayonne et gâteau basque a un prix très abordable. après une soupe de poisson plus qu'honorable, quel ne fut pas ma déception en goutant pour la 1ere fois une piperade. la promesse était faite de poivrons, de piment d Espelette, de tomate, de thym, de laurier, d oignons et d autre mets. immense déception après quelques bouchées d'une purée indéterminée apparemment faite d'œufs brouillés avec un seul et unique gout de tomates . Mise a part me rappeler l omette au ketchup de mon enfance...aucune surprise, aucun gout attendu , une simple bouilli baignant dans un fond d eau, probablement du a la tranche de jambon de Bayonne, trop cuite et quasiment plastifié, dont toutes les saveurs était parti en vacance . le repas s est "enfin" terminé sur un gâteau basque bon et qui a eu le mérite d effacer le gout de tomate qui s accrochait a mon palais. on notera cependant l accueil sympathique et souriant de l equipe qui a su nous trouver une table dans un restaurant plein et avoir un service efficace...
