We loved the blind food and wine concept that makes this fusion restaurant stand apart. We have done this a few times in various cities around the world and it is always fun. However this is the first time it was truly blind, in that you are only told what you are eating and drinking after each course. We loved this part as we spent the time to try and taste and identify each ingredient or style and variety of wine. We even got a little competitive in this. All the food was delicious. There was a great fusion between Japanese and European flavours. The food was well balanced and nothing to spicy, salty or powerful. We went for the maximum 5 courses which had an amuse bouche, vegetable course, 2 fish courses, meat course, pre-dessert, dessert and then petit fours. We also went for the 5 matching wines which were a mix of local and a few further afield French wines. With the meat course we got a left and right bank style red to compare and contrast. There were a couple of stunning wines and a couple Ok but they did highlight the classic styles and paired well with the food. Overall spent just over €100 each which I felt was fair value. I only gave 4 stars as while we loved the food the service was a little haphazard. There was 3 servers who would rotate to bring food and wine, but this meant on a couple of occasions they arrived separately and missed the wine explanation till prompted. This didn’t take away from the experience but is something that could be done a little more slicker.

The food is amazing and the experience is enhanced by forcing asking you to identify the ingredients. They do tell you everything in the end and it's always gratifying to see that you have guessed correctly. I had a wine pairing to go with the food, and my pairing included a sake. All of the wine was exceptional and the sake proved to be the best pairing by far! The rest of the wines were all French, but not necessarily local to Bordeaux. The wine was done similarly to the food in that they did not disclose the specifics until after the meal, which I felt was a worthwhile compliment to the experience. They also go into a fair amount of detail about the wines which further added to the overall experience. The service and atmosphere were both what one would expect in an establishment such as this and the servers were all fluent in English, and so capable of providing the best experience possible. I highly recommend this restaurant and will certainly be returning should I find my way back to Bordeaux again!
