Ici, l’ouverture fut magistrale avec le « Louise », cocktail solaire, flambé, à la fois théâtral et profondément sincère : un coup de cœur qui imprime la mémoire.
Le voyage culinaire se poursuit dans des assiettes construites avec audace : desserts qui osent réinventer le riz en quête de transcendance. Cette tentative d’emmener le pudding vers de nouveaux cieux demeure cependant suspendue, inachevée, comme une phrase restée en suspens.
La poitrine de veau, par ailleurs, témoigne d’une cuisson juste, mais la coupe choisie — avec un ratio gras/viande déséquilibré — s’est avérée une limite que la cuisine aurait pu anticiper. L’accompagnement, trop salé, accentua cette impression.
L’ensemble demeure toutefois une expérience intéressante, avec un rapport qualité-prix honnête, une maison qui ose, qui cherche, et parfois touche à la grâce.
